 A light dressing with vegetables equal a nice summer salad for a BBQ.
Salada de berinjela assada e pimentão (Portuguese)
Serves 4
Preheat the oven on broil 
or
Heat the BBQ

1 organic eggplant, sliced into rounds
seasons with (your choice):
  • cumin
  • coriander
  • turmeric
  • paprika
  • ginger
  • organic lime juice
2-4 organic bell peppers of your choice, cut in half
seasons with (your choice):
  • basil
  • chives
  • cilantro
  • coriander
  • cumin
  • curry
  • garlic
  • marjoram
  • rosemary
  • thyme

3 Tbs. (45 ml) olive oil

2 tsp. (10 ml) red wine vinegar
little Himalayan salt and black pepper
organic kale, spinach, and/or arugula
(dairy-free) cheese
chopped organic nuts and/or seeds

Oven Broil:

um 1. Place the eggplant and peppers, cut side down, on a parchment paper baking pan.

dois 2. Brush with some oil.

três 3. Broil until brown and tender, 7-10 minutes.


BBQ:

um 1. Place on a grill.

dois 2. Brush with some oil.

três 3. Grill on both sides until brown and tender.

quatro 4. Let the peppers cool, then remove the skin and seeds.


cinco 5. Chop the peppers into bite-size pieces.


seis 6. Whisk together a Tbs. (30 ml) oil, vinegar, salt, and pepper.


sete 7. Toss in the greens and cheese.


oito 8. Place the eggplants and peppers on a plate. 


nove 9. Top with nuts and/or seeds.



The ingredients might seem a little odd, but the result works, a little bit of French, some Japanese, toss in vegetarian; a brunch or dinner; with or without a side dish....Enjoy.
Serves 6
Preheat the oven to 350F (175C)

2 large Italain eggplants or 3-4 small Asian eggplants, peeled and cut into 1-inch (2,5 cm) cubes, about 5 cups (650 g)
1/2 tsp. (2,5 g) sea salt
3 tsp. (15 ml) olive oil
sliced organic mushrooms
black pepper
thyme
organic green onions, thinly sliced, separate the green and white
organic minced onion
grated ginger
2 bay leaves
1 cup (240 ml) organic vegetable stock/broth
1 cup (90 g) arame 荒布 (type of Japanese seaweed)
juice of 1 organic lime, about 2 Tbs. (30 ml)
4 tsp. (20 g) Dijon mustard
4 organic egg whites
2 organic egg yolks
1/8 tsp. (0,40 g) cream of tartar
1/2 cup (120 ml) organic (dairy-free) milk
(minced or dry) parsley

1. Toss the eggplant and salt in a bowl.
2. Sauté half of the mushrooms in 1 tsp. (5 ml) oil over medium heat. Sprinkle a little salt, black pepper, and thyme. Cook about 4 minutes, until they turn brown and the liquid almost evaporated.
3. Remove to a plate and sauté the rest of the mushrooms the same way. Add more oil if needed.
4. In a large pot, heat the rest of the oil over medium heat.
5. Add the onions and white part of the green onions,, stir and cook about 15 minutes.
6. Reduce the heat and add 1 Tbs. (15 ml) water if it is too dry.
7. Rinse the eggplant quickly, then using a paper towel, gently squeeze the eggplant to remove juices.
8. Add to the onion mixture, with the ginger and bay leaves.
9. Stir for a minute. Add the vegetable stock and half of the arame. 
10. Simmer over medium-high heat about 8 minutes. Stir.
11. Stir in 4 1/2 tsp. (23 ml) lime juice and 3 tsp. (15 g) Dijon.
12. Cook for a minute and then add more lime juice and Dijon to the taste you like.
13. Remove from the heat and use a blender to blend a purée.
14. Grease an 8-inch (20 cm) springform pan, round or square casserole dish.
15. Press the eggplant mixture into the bottom and up the sides.
16. Bake for 25 minutes.
17. The last 10 minutes, beat the egg whites with the cream of tartar to still peaks.
18. In a smaller bowl, whisk eat egg yahoos with the rest of thermal, 1 tsp. (5 g) Dijon, 1 1/2 tsp. (3 g) thyme, green part of the green onions,  1 1/2 tsp. (7,5 ml) lime juice, milk, and parsley.
19. Fold half the beaten egg whites into the egg yolk mixture. Then fold the rest of the egg whites.
20. Pour on top of the eggplant crust.
21. Gently lay mushrooms on top of the egg mixture.
22. Bake for 35-40 more minutes, until the eggs are set.


Puglia is located at the heel of the Italian peninsula. Though seafood, lots of vegetables, and olive oil are mainly found on the local menu, eggplant is popular as well.

Melanzane Ripiene Pugliesi (Italian)
Serves 6
(not dairy-free, 
but can be substituted with goat cheese)
Preheat the oven to 400F (200C)

6 small organic eggplants*, about 1 1/2 pounds/680 g)
1/3 cup (80 ml) olive oil
1 1/2 tsp. (6,5 g) sea salt
2 chopped organic cloves of garlic
2 chopped organic tomatoes
1/4 tsp. (1,25 g) crushed red-pepper flakes
1 cup (130 g) grated Grana Padano or Parmigiano-Reggiano
1 cup (130 g) grated Italian Fontina cheese (cow's milk cheese)
2 Tbs. (40 g) each chopped: mint and  parsley

uno 1. Cut the eggplants in half length-wise.
due 2. Scoop out any seeds, then the flesh, leaving a shell.
tre 3. Cut the eggplant flesh into small cubes.
quattro 4. In a skillet, over medium-high heat, add 2 Tbs. (30 ml) olive oil.
cinque 5. Season the instead of the eggplant shells with 1 tsp. (2,25 g) salt.
sei 6. Brown them, cut side down, in the oil, about 2 minutes.
sette 7. Remove and place in an oiled baking dish, cut side up.
ptto 8. In the same skillet, heat the remaining oil.
nove 9. Add the eggplant flesh and garlic.
dieci 10. Once the flesh begins to wilt, add the tomatoes and red pepper. 
undici 11. Cook until the eggplant is tender but the tomatoes are still retain their shape, about 5 minutes.
dodici 2. Scarp the mixture into a bowl, stir in half of the cheeses, parsley, and the mint.
tredici 13. Stuff the filling into the eggplant shells, top with the remaining cheeses.
quattordici 14. Cover with foil and bake for 30 minutes.
quindici 15. Uncover and bake until the eggplant shells are tender and the top is browned, about 10-15 more minutes.

*Choosing an eggplant:
  • firm flesh
  • no bruises
  • glossy skin
  • no blemishes
  • tight skin so it "squeaks" when your rub it
  • long green, not brown, steam means it was just picked
 They can be grilled or baked in the oven.


เต้าหู้เสียบไม้พริกแดง (Thai)
/têāh̄ū̂ s̄eīyb mị̂ phrik dæng/
Serves 4
Will take several hours to prepare.
Preheat the gill to 350F (400C)

1 14-16-ounce (400-455 g) block organic firm tofu, cut into 3/4 inch (2 cm) thick
1/4 cup (60 ml) organic unsweetened coconut milk
1/2 cup (120 ml) soy sauce or gluten-free liquid aminos
2 Tbs. (30 g) Thai red curry paste
1 Tbs. (15 g) fish sauce
4 minced organic garlic cloves or more to taste
1 Tbs. (15 g) grated ginger
zest of 1 organic lime
juice of 1 organic lime
1 (Japanese) organic eggplant, cut int half lengthwise and sliced into thick pieces
organic mushrooms
organic cherry tomatoes
organic red pepper, cut into pieces
optional: 
  • peanut sauce*
  • Sriracha 
  • coconut rice (made with coconut milk, 1 Tbs./15 g sugar, and toasted sesame seeds for garnish)

หนึ่ง /nùeng/ 1. Place an even layer of tofu on a towel. Cover with another towel. Place a heavy object on top. Let stand 30 minutes. Cut into cubes.


สอง /song/ 2. In a bowl, add together the coconut milk, soy sauce/liquid aminos, curry paste, fish sauce, garlic, ginger, lime zest, and lime juice. 


สาม /sam/ 3. Save a Tbs. (15 ml) to mix with the peanut sauce.


สี่ /see/ 4. Pour half of the mixture over the tofu. Set for an hour or overnight.


ห้า /hah/ 5. Add eggplant, mushrooms, and red bell pepper to the rest of the mixture. Set in the refrigerator for 1-2 hours.


หก /hòke/ 6. Use eight 10 to 12-inch (25-30 cm) wooden skewers, soak in water for 30 minutes.


เจ็ด /jèd/ 6. Thread each skewers with mushrooms, tofu, eggplant, cherry tomatoes, and bell pepper pieces.


แปด /ppaed/ 8. Brush some oil on the grill and grill for 12-13 minutes or in an oven. Turn over halfway through cooking.


เก้า /gaao/ 9. Serve with the any or all of the optional items.



*Peanut Sauce

Makes about a cup (240 ml)


1/2 cup (120 ml) (dairy-free) organic peanut butter

1/4 cup (60 ml) unsweetened organic coconut milk

2 Tbs. (30 ml) soy sauce or gluten-free liquid aminos

1 Tbs. (15 ml) each: tofu marinade sauce, fish sauce and water

2 tsp. (10 g) organic brown sugar


สิบ /sip/ ๑๐ 10. Combine all the ingredients. 

 

สิบเอ็ด /sip et/ ๑๑ 11. Add more water if it is too thin.

It is grown worldwide for its edible fruit,  but typically used as a vegetable. It is related to the tomato, chili pepper, and potato. 

I enjoyed the way my Turkish landlady made an eggplant casserole for me.-Mike

While it is cooking, serve a Turkish appetizer plate.*


Patlıcanlı Güveç (Turkish)
Serves 4-6
Heat the boiler

Sauces Sos:
1 cup (240 ml) (dairy-free) organic yogurt
chopped parsley and mint
1-2 minced organic garlic cloves

bir /beer/ 1. Combine all ingredients. Refrigerate until ready to serve.


Bulgur Bulgur:
2 tsp. (4 g) each: paprika and cumin
pinch or two each: cayenne pepper or red chili flakes and cinnamon
1 organic eggplant, sliced into thin rounds
1/4 cup (60 ml) olive oil
1 chopped organic onion
4 minced organic garlic cloves
1 Tbs. (15 g) organic tomato paste
1 cup (130 g) bulgur (not gluten free)
1 cup (240 ml) organic vegetable broth
4 organic tomatoes, thinly sliced

iki /ee-kee/ 2. Place the oven rack 6 inches (15 mm) from the broiler.


üç /üch/ 3. Mix the spices with 1 Tbs. (15 ml) oil.


dört /durt/ 4. Spay oil or line a baking sheet with foil. 


beş /besh/ 5. Place the sliced eggplants in single layer on the baking sheet.


altı /al-tuh/ 6. Brush each side with some oil and sprinkle with the spice mixture.


yedi /ye-dee/ 7. Boil 5 minutes, then flip for another 5 or more minutes, until soft and begins to brown.


sekiz /se-keez/ 8. Lightly coat the slow cooker with oil spray.


dokuz /doo-kuz/ 9. Microwave the onions, garlic, tomato paste, and 1 Tbs. (15 ml) oil in a bowl, about 5 minutes.


on /on/ 10. Stir in the broth and bulgur in the slow cooker.


on bir 11. Alternate the slices of eggplant and tomato into 3 rows on top of the bulgur mixture.


on iki 12. Cover and cook 3-4 hours on LOW or 2-3 hours on HIGH.

After living a year in Turkey, I enjoy Turkish cuisine (Türk mutfağı ).-Mike

It is a fusion of Mediterranean, Balkan, Middle Eastern, Central Asian, Eastern European, Armenian, Kurdish, and Georgian cuisines, with each village and woman's variation. 

Although meat-based foods are common, meals are largely center around rice, vegetables, and bread, filled with dozen of spices and herbs.

Serves 6

~Serve as a cold meze (Turkish: "snack or appetizer") (Spanish: tapa), hot entrée, main dish, or with grilled lamb, beef, or seafood.~

1/2 cup (120 ml) olive oil
3 small organic eggplants, cut in half, the lengthwise (do not remove the stem)
sea salt
black pepper
1 large organic onion, chopped
minced organic garlic
1 can of organic chopped tomatoes with its juice [14 1/2 ounce/430 g)]
1/4 cup (15 g) chopped parsley or 1/8 cup (7 g) dry parsley
6 toasted pita breads cut in quarters (or a gluten-free bread)
1 cup (240 ml) (dairy-free) yogurt
chopped dill or basil leaves
optional: drizzle of lemon juice


bir /beer/ 1. Pour 1/4 cup (60 ml) olive oil in the slow cooker. Brush the bottom and sides.


iki /ee-kee/ 2. Score the flesh of each eggplant. Do not cut the skin.


üç /üch/ 3. Place the eggplant skin-side down and sprinkle with some salt and pepper.


dört /durt/ 4. In a skillet, heat the rest of the oil over medium-hight heat.


beş /besh/ 5. Sauté the onions and garlic for 3 minutes.


altı /al-tuh/ 6. Add the tomatoes and parsley. Sauté another 5 minutes.


yedi /ye-dee/ 7. Spoon it over the eggplant, covering each half with some of the sauce.


sekiz /se-keez/ 8. Cover and cook for 2 hours on high or 4 hours on low.


dokuz /doo-kuz/ 9. Uncover and rest for 10 minutes.


on /on/ 10. Transfer to a plate and spoon any juice over the eggplants, sprinkled dill or basil leaves, and optional lemon juice.


on bir 11. Serve with bread and bowl of yogurt. 





 We did not stop with "sweet potatoes' but add other vegetables to this Indian dish.

शकरकंद करी (Hindi)
/shakarakand karee/
Serves 4-6

~Increase the amount of spices to taste~
1 (14.5 ounce/411 g) can organic diced tomatoes with juice
3 Tbs. (45 ml) olive oil
4 tsp. (8 g) curry powder
3 tsp. (6 g) garam masala
2 chopped organic onions
1 organic sweet potato, peeled and cut into bite size pieces
4 minced organic garlic cloves
1 jalapeño, stemmed, seeded and minced or cayenne pepper
1 Tbs. (15 g) grated ginger
1 Tbs. (15 g) organic tomato paste
1 organic eggplant, cut into bite size pieces
organic green beans, trimmed an cut into 1-inch/2,5 cm lengths
1 1/2 cups (360 ml) water
1 (15-ounce/430 g) rinsed, organic chickpeas
1/2 cup (120 ml) canned organic coconut milk
minced cilantro or parsley
chutney of choice
cook rice

एक /ek/ 1. Pulse tomatoes and its juice until smooth.


दो /do/ 2. Heat the oil over medium-high heat.


तीन /teen/ 3. Add the curry powder and garam masala, cook about 10 seconds.


चार /char/ 4. Stir in the onions, sweet potatoes, cook about 10 minutes.


पांच /panch/ 5. Reduce the heat to medium.


: /chay/ 6. Stir in the garlic, jalapeños/cayenne pepper, ginger, and tomato paste. Cook about 30 seconds.


सात /sāth/ 7. Add the eggplant and green beans, cook, stir for 2 minutes.


आठ /āt/ 8. Stir in the water and add the chickpeas and tomatoes, bring to a simmer.


नौ /nao/ 9. Cover, reduce heat to medium-low, and cook for 20-25 minutes.


दस /das/ 10. Uncover, stir in the coconut milk, cook 1-2 minutes.


ग्यारह /gyārah/ 11. Remove and stir in the cilantro/parsley.


बारह  /bāraha/ 12. Serve with the chutney over rice..



Briámi is thin roasted vegetable casserole, starting with potatoes, zucchini, red onions, and tomatoes. Be fancy and add eggplant or bell peppers! A Turkish version called Türlü /tourlou/ "something of diverse kinds" is similar, without feta cheese. Traveling to the west, in southern Italy the dish is called caponata and up to France, it is ratatouille. Each with its own cultural touch of spices and herbs.

Μπριάμη (Greek)
/briámi/
Serves 4

  • 1/4 cup (60 ml) olive oil
  • 3 or more minced organic garlic cloves
  • pinch or two of red pepper flakes
  • black pepper
  • 1 cup (45 g) sliced basil leaves
  • 2 tsp. (10 ml) Greek or Italian oregano
  • 2 organic gold, red, or white potatoes, non-peeled, thinly sliced 
  • 1 organic red onions, thinly sliced
  • 2 organic tomatoes, thinly sliced
  • 1 cup (115 g) cheese:
-parmigiano-reggiano, romano, parmesan, or
-kefaltryi κεφαλοτύρι (made from sheep's milk κεφαλοτύρι προβάτων /kefalotýri provátonor goat's milk kaτσικάκι κεφαλοτύρι /katsikáki kefalotýrior both), or
-goat cheese, or 
-a dairy-free cheese if you cannot find the goat kaτσικάκι κεφαλοτύρι
  • 2 organic zucchini,
  • 1 organic Japanese eggplant, diced
  • 1/4 cup (60 ml) organic vegetable broth
  • chopped parsley for garnish


ένα / EN-a/ 1. Coat the inside of the slow cooker with cooking spray.


δύο /THEE-oh/ 2. In a bowl, whisk the olive oil, garlic, red pepper flakes, pepper, basil, and oregano.


τρία /TREE-a/ 3. Drizzle a little on the bottom of the slow cooker.


τέσσερα /TESS-air-uh/ 4. Add the potatoes.


πέντε /PEN-day/ 5. Add a fourth of the onions, then third of the tomatoes, and half of the cheese.


έξι /EX-ee/ 6. Add the zucchini and some olive oil.


εφτά /EF-TA/ 7. Arrange another fourth of onions, then third of tomatoes. Drizzle with oil.


oκτώ /oc-TOH/ 8. Add a fourth of the onions.


εννιά /en-NAY/ 9. Add all the eggplant and then rest of the onions and tomatoes.


δέκα /THEK-a/ 10. Pour in the broth.


έντεκα /éndeka/ 11. Clover and cook on high for 2 hours or low for 4 hours.


δώδεκα /dódeka/ 12. Uncover the slow cooker and sprinkle the parsley over the top.


δεκατρία /dekaTRÍA/ 13. Let it rest for 20 minutes.

Most Brazilian stews are seafood (moqueca), so skip the fish and use vegetables! It is slowly cooked in a terracotta cassole, but a large pan over the stove works just as well.
Serves 4-6

1 organic each: two different colored peppers, thinly sliced
2 zucchini, cut bite-sided pieces
1 organic eggplant, cut bite-sided pieces
2 organic tomatoes, chopped
1 organic onion, chopped
olive oil
organic scallions, chopped
organic cloves of garlic, minced
paprika
chili powder
juice of one organic lime
1/2 cup (120 ml) organic vegetable broth
1 3/4 cups (420 ml) organic coconut milk
organic tomato paste
cilantro or parsley, chopped
cooked rice

1. Fry the onions and peppers in oil over medium heat, about 5 minutes.
2. Add the scallions, garlic, paprika, and chili powder. Cook about a minute.
3. Add the coconut milk, vegetable broth, tomatoes, and tomato paste. Simmer uncovered about five minutes.
4. Add the eggplant for 2 more minutes
5. Add the zucchini.
6. Simmer 3-4 minutes.
7. Add the lime juice.
8. Remove the pan and add cilantro/parsley.
7. Serve in bowls of rice.
Serve the taste of spicy eggplant for your next side dish or even as a main course.

main dish for 2

1 large or 2 small organic eggplants, cut into thick slices
olive oil
2-3 tsp. (30-45 ml) each: spicy malagueta marinade* and chimichurri marinade*
black pepper to taste

Seasoning:
1 tsp. (5 g) each: oregano and cumin seeds
1/2 tsp. (2,5 g) each: parsley, turmeric, white peppercorns
dash or two of cayenne pepper

1. Mix all the spices together.
2. Brush olive oil on the sliced eggplants.
3. Sprinkle spice mixture and black pepper.
4. Grill 2-4 minutes on each side, until the edges turn golden brown.
5. Transfer to a plate and drizzle both marinades on top.
6. Serve warm.


*spicy malagueta marinade:
Makes about 1/2 cups (65 g)
Preheat the over to 350F (175C)

3 Tbs. (45 g) small red chilies, split lengthwise, seeded or not
3 organic garlic cloves, crushed
olive oil
1 Tbs. (15 ml) organic lemon juice
1 1/4 tsp. (6,5 g) each organic: sugar and tomato paste
1/2 tsp. (2,5 g) paprika
dried oregano

1. Place the chiles, garlic, and some oil on a roasting pan.
2. Roast for about 10 minutes.
3. After cooled, purée in a blender.
4. Add the rest of the ingredients.
5. Blend again.
6. It will keep in a refrigerate for up to a week.


*chimichurri marinade
Makes about 3/4 cups (175 ml)

6 tsp. (25 g) fresh or 3 tsp (15 g) dry Italian parsley
5 organic cloves of garlic
1 tsp. (5 g) dried oregano
2/3 cup (160 ml) olive oil
1/2 tsp. (2,5 g) dreid red pepper flakes
2 Tbs. (30 ml) red wine vinegar
black pepper to taste

If using fresh parsley: (Skip if using dry. Go to #5.)
  • 1. Bring a small pan of water to boil and a bowl of ice water.
  • 2.  Black the parsley for a minute.
  • 3.  Drain and place in the ice water.
  • 4. Drain and pat dry with paper towels.

  • 5. Blend in a food processor all the ingredients.
  • 6. Use soon or refrigerate for 3-4 days.


 The sauce can be as spicy as you like.

Albergínia amb salsa de tomàquet (Catalan)

Serves 4
Preheat the broiler

2 small organic eggplants
4 Tbs. (60 ml) olive oil
2 green chilis, sliced
8 organic chopped garlic cloves
1 pound (455 g) organic tomatoes, chopped
Tahini
green chilies, minced

-Catalan-
un 1. Cook the eggplants on all sides over a high flame until the skins are charred. 

dos 2. Let the eggplants cool to the touch. 

tres 3. Peel off the skins.

quatre 4. Slice into a fan, leaving the stem on.

cinc 5. Heat the oil in a skillet over medium heat.

sis 6. Sauté the sliced chilis about a minute.

set 7.  Add the garlic for another minute.

vuit 8. Add the tomatoes. Do not stir for a minute. then still and cook about 5 minutes, until the sauce thickens.

nou 9. Dip both sides of the eggplants into the sauce.

deu 10. Transfer the sauce to an ovenproof baking dish. 

onze 11. Arrange the eggplants on top of the sauce.

dotze 12. Broil 10-15 minutes.

tretze 13. Place the sauce on a dish. Top with the eggplants.

catorze 14. Garnish with tahini and minced chiles to one side of the dish.

Preheat a grill 
or use a grill on top of a stove

sliced thinly organic eggplant
olive oil
organic hummus
(gluten-free) toasted bread
organic spinach
feta cheese (or dairy-fee goat cheese)

ένα / EN-a/ 1. Salt both sides of the eggplant slices, sit for 20 minutes, rinse and pat dry.

δύο /THEE-oh/ 2. Brush the slices with oil.

τρία /TREE-a/ 3. Grill lightly on each side, about 4 minutes.

τέσσερα TESS-air-uh/ 4. Spread the hummus on the bread.

πέντε /PEN-day/ 5. Top with spinach leaves, feta, and eggplant slices.

έξι /EX-ee/ 6. Add the other slice of bread and serve warm
Moussaka is usually made with layering slices of eggplant or potato with ground beef or lamb. 

It is common in the Balkans and the Middle East, with lots of local and regional variations: 
  • Turks (musakkaconsists of thinly sliced, fried eggplant, green peppers, and onions in a tomato-based meat sauce.
  • Greeks ( /mousakásμουσακάς) has eggplant, zucchini, potatoes, and mushrooms with a milk-base sauce.
  • Arabs (مسقعة/musaqqa‘a/ literally "that which is fed liquid") has ground beef and eggplant, serve cold or sometimes hot as well.
  • Bulgarians (/musakaмусака) use potatoes instead of eggplant with pork or beef, topped with milk or yogurt mixed with raw eggs.
This is a vegetarian version.

Serves 8
Pre-heat the oven to 350F (175C)

1 organic eggplant, cut crosswise into thin slices
chopped organic onion
minced 2-3 garlic cloves
1 cans (19 ounces/545 g) organic beans of your choice, rinsed and drained
1 can (14.5 ounces/415 g) organic diced tomatoes, save a liquid
2 Tbs. (30 g) organic tomato paste
1 tsp. (10 g) ground cinnamon
1 Tbs. (15 g) (dairy-free) organic butter
2 Tbs. (30 g) (gluten-free) flour
1 1/2 cups (360 ml) (dairy-free) organic milk
(gluten-free) breadcrumbs (3 slices)
olive oil
black pepper and nutmeg to taste
olive oil cooking spray

1. Coat each eggplant slice on both sides with cooking spray.
2. Place on a backing sheet in single layers.
3. Boil for about 5 minutes, turn once. Set aside.
4. Coat a skillet with cooking spray.
5. Add the onions and garlic, cook 5 minutes.
6. Add the beans, tomatoes and its liquid, tomato paste, cinnamon, and black pepper.
7. Bring to a boil, reduce and simmer uncovered between 10-15 minutes, until thickened, stir.
8. Melt butter over medium heat. 
9. Stir in the flour and milk.
10. Cook over medium heat until thick and bubbly.
11. Remove and stir in nutmeg.
12. Spray a baking dish.
14. Layer half of the eggplant slices, then spread the bean mixture, top with eggplant.
15. Pour the sauce on top, spread evenly.
16. Add the breadcrumbs in the oil and sprinkle over the sauce.
17. Bake for 30-35 minutes until heated through and the breadcrumbs are golden brown.
