 In 20 minutes you can have a French appetizer on the coffee table.

France is one of five European countries that grown white asparagus, which are grown underground. There are special festivals from mid-April to June 24th just for white asparagus.

Asperges et œuf (French)
Severs 4
Preheat the oven to 450ºF/230ºC

bunch of organic white or green asparagus, trimmed
4 Tbs. (60 ml) olive oil
Himalayan salt and black pepper
2 Tbs. (30 ml) organic lemon juice
grated (dairy-free) cheese, eg. Parmesan
4 organic hard boiled eggs


un 1. Place the asparagus on a large sheet pan.


deux 2. Drizzle with oil and season to taste.


trois 3. Roll the asparagus in the oil, then spread in a single layer on the baking sheet.


quatre 4. Roast about 8-12 minutes until they are tender and lightly browned.


cinq 5. Remove and drizzle with lemon juice and cheese.


six 6. Peel the cold eggs and slice horizontally.


sept 7. Serve a sliced egg with the asparagus on four plates or in bowls.

If you can find white asparagus, it's the tastiest. But green asparagus will do, also. You are set for a flavorful spring salad. Mid-April to the end of June is (white) asparagus season (Spargelzeit) in Germany. 

White asparagus (aka "white gold") is also grown in Spain, the Netherlands, France, Italy, Belgium, Switzerland, and Peru. 

Spargel-Lachs-Salat (Germany)
Servers 4
 

2 pounds (910 g) organic asparagus, washed and peel, cut off the ends
1/2 tsp. (2,5 g) each: Himalayan salt and sugar
4 Tbs. (60 ml) raspberry vinegar
6 Tbs. (90 ml) olive oil
1 tsp. (5 g) mustard
1 small organic red onion, chopped
10 ounces (285 g) wild salmon chunks, smoked or canned, divided into bite-size pieces 
organic lettuce leaves
dill


eins 1. Cut the asparagus into 1 1/2 inch (380 cm) chunks.


zwei 2. Bring water to a boil, add the salt, sugar, and asparagus. Cook 10-15 minutes.


drie 3. Remove and drain the asparagus. Set aside to cool.

 

vier 4. Whisk the oil, mustard, and some sugar.


fünf 5. Add the asparagus, chopped onion, and salmon chunks.


sechs 6. Fold the mixture, cover, and chill for about 30 minutes.


sieben 7. Plate the lettuce leaves, add the salmon and garnish with dill.

They are asparagus, Brussels sprouts, and green beans for a delicious side-dish.

Trio de légumes épicés (French)
Serves 3-4
Preheat the oven to 425ºF (220ºC)
or grill

Sauce:
1 Tbs. (2 g) chili powder
1 Tbs. (15 ml) each: sesame and olive oil, rice vinegar, soy sauce or gluten-free liquid aminos
1 Tbs. (15 g) organic honey

un 1. Mix all the ingredients in a bowl.


Vegetables:

1/2 pound (225 g) each organic: asparagus (trimmed and cut in half), Brussels sprouts (cut in half), and French green beans


Nuts: of your choice, sliced



         Baked...     

deux 2. On a baking sheet, spray with olive or avocado oil.


trois 3. Place the vegetables in a single layer.


quatre 4. Drizzle the sauce on top, then toss to coat.


cinq 5. Roast about 10-15 minutes.


six 6. Place on a serving dish.

Asparagus, also called garden asparagus, is a native to Eurasia. Green asparagus (grown above grown) is eaten worldwide. While white asparagus (aka white gold, edible ivory, or the royal vegetable) (grown underground) are found mostly in Germany, France, the Netherlands, Spain, and Switzerland, as well as in Peru and Washington state. 

If you are in Germany in mid-April to June 24th, don't miss the Spargelsaison or Spargelzeit (asparagus season) and enjoy white asparagus prepared in many different ways.

Serve 4
Preheat the oven to 375ºF (190ºC)

1 bunch organic asparagus, trimmed
2 cups (260 g) shredded mozzarella, Gruyère cheese, or a dairy-free cheese
1 cup (240 ml) (dairy-free) organic milk
2 organic eggs
garlic minced
1/2 cup (65 g) grated parmesan cheese or a dairy-free cheese
2 Tbsp (30 g) (dairy-free) butter
thyme, to taste
garnish: chopped chives
optional: cooked shredded chicken

1. Spread out the asparagus in a baking dish.
1. Top with optional chicken.
2. Mix the garlic, milk, eggs, parmesan cheese, and butter
3. Pour over the asparagus.
4. Sprinkle the shredded cheese.
5. Bake 25-30 minutes.
6. Garnish with thyme and chives.

The French salad has tuna, but not this one, olives, artichokes, capers and lemon vinaigrette are found in this flavorful afternoon salad or as a meal on its own. 
Salade Niçoise (French)
Serves 3
Salad:
1 can water-baked wild tuna, drained
1 head of organic lettuce, torn or chopped
2 cups (260 g) organic red potatoes, cut into fourths
1 cup (130 g) each organic cut in half: French beans and asparagus
1 organic tomato, quartered or cheery tomatoes, halved
4 hardboiled organic eggs, cut into fourths
Kalamata or Niçoise olives, sliced
capers, drained
chopped parsley
organic cooked or canned white beans, drained and rinsed
optional: 1 cup (130 g) Brussels spouts, quartered and/or lemon wedges

~Provençal~

un /un/ 1. Place lettuce on serving platter.


dos /doos/ 2. Boil the potatoes uncovered for 10 minutes or until tender; drain and set aside.


tres /th-re-ss/ 3. Steam the green beans, asparagus, and optionals Brussels spouts  for 5 minutes.


quatre /KAH-tray/ 4. Place each vegetable on the bed of lettuce. 


cinc /seenk/ 5. Add the tuna and white beans in the center.


sièis /seei-s/ 6. Place the tomatoes, eggs, and olives around the lettuce.



Dressing:

1/2 cup (120 ml) olive oil

2 Tbs. (30 ml) organic lemon juice

1/2 tsp. (2,5 g) Dij0n mustard

1 Tbs. (15 g) each minced: organic shallots and dill

1 Tbs. (15 ml) organic maple syrup

Serves 4
Preheat the oven to 425F (220C)

organic asparagus, trim the ends off
olive oil
Himalayan salt and black pepper
organic lemon wedges
chopped parsley or mint leaves
optional: 
  • sliced organic radishes
  • grated (dairy-free) cheese
  • red pepper flakes
  • dill sauce*

1. Line a baking sheet with parchment paper.
2. Toss the asparagus with salt, black pepper, olive oil, and optional red pepper.
3. Bake about 12 minutes.
4. Served with lemon slices, parsley/mint, and any optional items.


*Dill sauce:
1/4 cup (60 g) (dairy-free) yogurt
1/4 cup (30 g) (dairy-free) mayonnaise
1 Tbs. (15 ml) organic lemon juice
1 grated organic clove of garlic
1/2 tsp. (2,5 g) onion powder
chopped fresh or dried dill

1. Stir all the ingredient together.
2. Chill in the refrigerator.

Picture Egyptian being served a plate of asparagus in 3000 BCE. In ancient times, it was also known in Syria, in the Iberian Peninsula (Spain/Portugal), ancient Greeks and Romans eating it fresh in the summer and dried in the winter, or finding recipes for asparagus in a 1st century AD/CE Greek cooking book!
Serves 4
Serve over rice or as a side dish.

2 Tbs. (30 ml) water
1 Tbs. (15 ml) soy sauce or gluten-free liquid aminos
1 Tbs. (15 ml) dry sherry
2 Tbs. (30 g) each: organic brown sugar and grated ginger
1 tsp. (5 ml) sesame oil
1 Tbs. (15 ml) olive oil
1 pound (455 g) organic thin asparagus (1/2 inch or 12 mm thick), trimmed and cut into bite-size pieces
organic mushrooms
organic scallions, green parts only, sliced thinly


~ Ancient Egyptian~

l   /wa/ 1. Combine the water, soy sauce/liquid aminos, sherry, sugar, ginger, and seams oil in a bowl.


l l /sen/ 2. Heat the oil in a wok or skillet over high heat.


l l l /khemet/ 3. Stir-fry: little bit of water with the asparagus and mushrooms for about 3 minutes.


l l l l /feden/ 4. Add the sauce. Cook a 1-2 minutes.

Use mashed avocados for a healthier salads, sandwiches, and wraps instead of mayonnaise. 

Wraps are called burritos in Mexico. Wraps are found in Mediterranean and in South Asia where the Kolkata, India there is a street-food called kati roll. People  have been eating wraps before the 1900s. It was not until the 1980s and '90s, that Mexican and Tex-Mex burrito became popular in California.

Burrito de aguacate y espárragos (Spanish)
Serves 6
(Rice needs to be chilled.)

organic asparagus, steamed
ripe organic avocado(s)
juice of 1 organic lime
minced organic garlic cloves
2 cups (260 g) chilled cooked rice
3 Tbs. (45 ml) organic (dairy-free) yogurt
(gluten-free) tortillas
cilantro or parsley
diced red onion
optional: 
  • chopped organic red bell pepper
  • coriander powder
  • crushed red pepper
uno 1. Mash the avocado, lime juice, and garlic.
dos 2. In another bowl, mix the rice and yogurt.
tres 3. Spread each tortilla with avocado mixture, top with the rice, cilantro/parsley, onions, (and optional bell pepper)
cuatro 4. Add the asparagus and any seasonings.
cinco 5. Fold up broth sides and roll tightly.
seis 6. Cut in half before serving.

Usually, olive oil is served over Spanish salads.

Ensalada de naranja y espárragos (Spanish)
Serves 4

organic asparagus, trim the ends and cut into bite size pieces
2 organic orange
2 organic tomatoes, cut into segments
organic (mixed) shredded lettuce leaves
2 Tsp. (30 ml) olive oil
1/2 tsp. (2,5 ml) sherry vinegar

uno 1. Cook the asparagus in boiling salted water for about 4 minutes. Drain and run under cold water.

dos 2. Zest half an orange. Peel the others and cut into segments.

tres 3. Squeeze out the juice from the membrane, save.

cuatro 4. Arrange the asparagus, oranges, tomatoes, and lettuce into a bowl.

cinco 5. Mix together the oil, vinegar, 1 Tbs. (15 ml) of orange juice, and 1 tsp. (5 ml) orange zest.

seis 6. Just before serving, pour the dressing over the salad and mix.

Disfruta la ensalada!

Either white or green asparagus with a vinaigrette dressing have been part of the French cuisine for several centuries.
Asperges marinées
Sert 6 personnes (French)

Use organic ingredient.
1 1/2 pounds (670 g) asparagus
2 Tbs. (30 ml) red wine vinegar
1/2 cup (120 ml) olive oil
fresh thyme, chopped parsley and onions
1 chopped, hard-boiled egg
drained capers

un 1. Bring 2 quarts (about 2 liters) of water with a little salt to a boil over high heat.

deux 2. Cook the asparagus until tender about 2-3 minutes, then drain.

trois 3. Add cold water to cover the asparagus for 5 minutes. Drain again and pat dry with paper towels.

quatre 4. Whisk together the vinegar, oil, thyme, parsley, egg, capers, and onions.

cinq 5. Plate the asparagus and pour the vinaigrette over them.

Asparagus plants take about two years to grown.
Then the bed will produce crops for the next 20-30 years!
White asparagus are picked before they peek through the soil.
They are sweeter and more tender than the green variety.






 Here's another way to enjoy fish tonight.
Serves 3

organic asparagus, trimmed
organic green onion chopped or cut into small pieces
capers
3 pieces of flounder or tilapia 
organic sliced mushrooms
3 organic lemon slices and little juice

1. On three pieces of parchment paper, lay asparagus and mushrooms in the middle of each one.
2. In a small bowl, whisk some olive oil, lemon juice, and capers.
3. Lay the fish on top of the vegetables, spread the olive oil-lemon sauce on both sides of the fish.
4. Lay the sliced lemon on each one.
5. Sprinkle with the cut green onions.
6. Wrap each packet with the seam on top, rolling seam over itself once or twice to seal tightly and leaving a little room inside for steam to circulate.
7. Place packets in a cast iron skillet over a medium heat for 15 minutes or until temperature is 145F (63C).
8. Rotate packages occasionally for even cooking.

Assorted breads like buttered rye (Danish: rugbrød, Swedish: rågbröd), dark brown bread, topped with cold cuts, pieces of meat or fish, cheese, slices of vegetables, spreads....goes on and on. Here are some suggestions.
Smørrebrød (Danish)
Smørbrød (Norwegian)
Smörgåsar or Macka (Swedish)
Voileipiä (Finnish)

Open-face sandwich dates to European Middle Ages and is not limited to just Scandinavia. Other countries have their wonderful variations: France, Belgium, Austria, Germany, Czech Republic, Hungary, the Netherlands, Nordic countries of Estonia, Latvia, and Lithuania, drop down to Russia, and over to Poland and Ukraine. They are even found in North Africa. 

A Chickpea Spread
Makes 1 1/2 cups (225 g)
14 ounce can (400 g) organic chickpeas, rinsed and drained
3 Tbs. (45 g) nutritional yeast
2 Tbs. (30 ml) organic lemon juice
1/2 tsp (2,5 g) each ground: cumin and coriander
pinch or two cayenne

1. In a food processor or high-speed blender, add add the ingredients and whirl on and off at high speed until crumbly.
2. Add 1/4 (60 ml) water and continue to whirl. Add a little more water if needed until it very smooth and creamy.
3. Transfer to a tightly covered container and refrigerate until ready to use.
4. It will keep up to a week.

A Creamy Yogurt Cheese
Makes 2 cup (200 g)
takes 2 days
3 cups (720 ml) organic (dairy-free) yogurt
1 Tbs. (15 g) each minced: chives and parsley
1/2 tsp (2,5 ml) organic lemon zest

1. Line a fine-mesh sieve with several layers of cheesecloth.
2. Place over a bowl with sauce at the bottom.
3. Spoon the yogurt into the sieve.
4. Place in the refrigerator for up to 2 days, until the yogurt drained out liquid whey, leaving a thickened yogurt cheese in the sieve.
5. Discard the why and store in the refrigerator to use in other recipes (example baking).
6. Transfer the cheese to a bowl an stir in the remaining ingredients.
7. It can be stored in a container and store in the refrigerator up to a week.

Honey Dill Mustard
Makes 1 cup (130 g)
1/4 cup (60 ml) organic honey mustard
3 Tbs. (45 ml) organic cider vinegar
1/2 cup (120 ml) grape seed or olive oil
chopped dill sprigs
1 tsp. (5 g) black pepper

1. Whisk mustard and vinegar.
2. Slowly add the oil.
3. Stir in dill and pepper

"Sandwiches"
Use organic if possible and cut to fit on the (gluten-free) breads. Smear the bread with butter or one of the above spreads and add toppings. True to Scandinavian etiquette, use only knife and fork and not your hands. Then, too, smaller pieces of bread for hors d'œuvres can be picked up.

Toppings
Use organic if possible.
  • roasted peppers
  • lettuce
  • vegetables: spinach, shredded cabbage, cucumber, tomatoes, radish, asparagus, beets, zucchini, potato...
  • fish: (smoked) herring, shrimp, eel, fried filet...
  • ham
  • roast beef or pork
  • liver paté
  • chicken salad
  • port sausage
  • even tongue
  • sliced hard-boiled eggs
  • (dairy-free) cheeses
  • etc.


Examples
1. boiled tricolor baby potatoes, dill spread, sprig of dill
 (a) dill spread: 2 Tbs. (30 ml) (dairy-free) mayonnaise, 1/2 Tbs. (7,5 g) chopped dill
2. hummus, cucumber, and parsley
3. smashed yams with green and red cabbage
4. tomato, mozzarella, basil
5. roast beef, parsley spread (see #1a), scallion, pimiento
5. asparagus, pickled baby peppers, shaved (dairy-free) cheese (Parmesan)
6. beet hummus, pickled beets, roasted garlic, scallion.
7. small baby shrimp, lettuce leaves, ground black pepper, yogurt spread
8. smoked salmon coarsely chopped, scallions, onion, parsley or cilantro, yogurt spread, squeeze of lemon juice, dash of Tobacco, dill sprigs
9. shrimp, egg, and dill
10. salmon, apple, kale
11. shrimp, avocado, crispy potato
12. pickled herring, orange, crème fraiche
etc.

Serve for breakfast, lunch, dinner even as hors d'œuvres.


For best results, start with a hot pan and only stir the asparagus a few times. Use spears that are no thicker than 1/2 inch (12 mm). Here are three ways to serve them.
Serves 4

1 pound organic asparagus, tough ends trimmed and cut into thin 2-inch (5 cm) lengths 
1 Tbs. (15 ml) olive oil

1. Heat the oil in a skillet over high heat until smoking.
2. Add the asparagus, stirring a few times, until the asparagus is spotty brown, 3-4 minutes.
3. Follow one of the following dishes:


...shiitake mushrooms
2 Tbs. (30 ml) water
1 Tbs. (15 ml) soy sauce or dairy-free liquid aminos
1 Tbs. (15 ml) dry sherry
2 tsp. (10 g) each: organic brown sugar and grated ginger
1 tsp. (5 g) toasted sesame oil
4 ounces (115 g) shiitake mushrooms, steamed and sliced thin
2 organic scallions, green parts only, sliced thin

4. Combine water, soy sauce/liquid aminos, sherry, sugar, ginger,, and sesame oil in a bowl.
5. Add the mushrooms to the cooked asparagus, cook a few more minutes.
6. Add the sour sauce/liquid aminos and cook, stir once or twice, 1-2 minutes.
7. Transfer to a serving platter, sprinkle with scallions greens, and serve.



...red bell pepper
1 Tbs. (15 ml) each: water, organic orange juice, and rice vinegar
1 Tbs. (15 g) organic sugar
1 tsp. (5 ml) ketchup
1/2 tsp. (2,5 g) salt into the water
1 steamed organic red bell pepper cut into 2-inch (5 cm) long matchsticks

4. Whisk all together.
5. Add to the cooked asparagus, cook a few minutes.
6. Transfer to a serving platter.


...red onion
4 tsp. (20 ml) fish sauce
1 Tbs. (15 ml) organic lime juice
2 tsp. (10 g) minced lemon grass
dash of red pepper flakes
 2 tsp. (10 g) organic brown sugar
1/2 organic red onion slices
fresh mint

4. Whisk together the fish sauce, lime juice, lemon grass, and red pepper flakes into the water, along with the sugar to the cooked asparagus.
5. Cook a few minutes. 
6. Transfer to a serving platter, with sliced onions and fresh mint.


Asparagus plant takes about two years to develop, but the plant will last for the next 20-30 years.

Use slender Asian eggplant*.

Serves 4
Preheat the grill over medium-high heat

*Other vegetables like bell peppers, crookneck squash, red onions, and asparagus also make good additions to the gill.

A. For the Vegetables: ends trimmed and cut in quarters lengthwise
1 1/2 pounds (680 g) organic Asian eggplant*
2 medium organic zucchini
2 Tbs. (30 ml) olive oil
black pepper to taste

1. Combine marinade ingredients in a small bowl.

B. For the marinade:
2 Tbs. (30 ml) each: rice vinegar and soy sauce (gluten-free liquid aminos)
1 Tbs. (15 ml) each: dry sherry, olive oil, and sesame oil
1 Tbs. (15 g) each: organic brown sugar and grated ginger 
2 minced organic garlic cloves 
Garnish: 2 thinly sliced organic green onions, sliced OR 1 Tbs. (15 g) sesame seeds

1. Brush the vegetables with the oil and season with pepper
2. Grill vegetables so they are grille marked and just cooked through.
3. Remove to a pan and pour over marinade.
4. Arrange on a platter.
5. Sprinkle with green onions.

Choosing an eggplant:

  • firm flesh
  • no bruises
  • glossy skin
  • no blemishes
  • tight skin so it "squeaks" when your rub it
  • long green, not brown, steam means it was just picked
