Whip up Greek yogurt, add herbs and the pasta salad is ready for a new treat. 

Many Middle Eastern countries have their own version of pasta with garlic yogurt: Turkey, Lebanon, Syria, Jordan, Palestine, Armenia, Iran, Georgia, and Afghanistan.

Yoğurt Soslu Makarna Salatası (Turkish)
Serves 4

curved pasta, Fusilli, Cavatappi, Rotini, Gemlli, Fusilli col Buco (cook as directed) or a gluten-free pasta
organic cucumber, thinly sliced 
organic cheery tomatoes, cut in half
sliced organic scallions or red onion
minced organic garlic and bell peppers
2 Tbs. (30 m) red wine vinegar
3 Tbs. organic lemon juice, and zest
olive oil
parsley
oregano
dill
3/4 cup (95 g) Greek yogurt 
1/3 cup (80 g) heavy cream
obtional: feta cheese


bir /beer/ 1. Add the cold cooked pasta in a bowl.


iki /ee-kee/ 2. Add the rest of the ingredients except the yogurt, lemon juice, feta cheese, and yogurt. Toss.


üç /üch/ 3. In another bowl, whisk the yoghurt and cream for several minut


dört /durt/ 4. Fold in the lemon zest, and yoghurt sauce.


beş /besh/ 5. Top with more dill, optional feta cheese, and drizzle with olive oil.


There are many recipes for tuna salad. I think the mustard makes it "German".

P.S. Substitute herring for a Herring Salad (Heringfssalat). I wonder if I can use sardines instead? I like mustard and cheese in a sardine sandwich.-Mike

eins 1.  Mix all the ingredients in a bowl.

zwei 2. Let it sit for 15 minutes for the flavor to come together.

drei 3. Spread on (guten-free) bread or serve over (organic) lettuce as a salad.


Thunfischsalat (German)
tuna salad

1 can of wild tuna, drained 
2 organic hard-boiled eggs 
1/2 chopped organic onion
2 chopped organic dill pickles
1/4 cup (60 ml) (dairy-free) organic yogurt
1 tsp. (5 ml)  pickle juice
1 tsp. (5 g) mustard
2 tsp.  (10 ml) organic lemon juice


Thunfischsalat mit Mais und Paprika

with corn and bell peppers


2 cans of wild tuna, drained

3 sliced organic tomatoes 

3 organic bell peppers (diced, mixed colors)

1 sliced organic cucumber 

1/2 can of organic corn

parsley

3 Tbs. (45 ml) each: olive oil and white vinegar



Cremiger Thunfischsalat

creamy tuna salad


2 cans of wild tuna, drained

1/4 cup (30 g) each: chopped red onion and red onion

1/4 cup (30 g) each: mayonnaise and plain Greek yogurt or dairy-free yogurt 

1 diced organic celery stalk 

diced organic dill pickles

mustard

parsley

If you look at the store brands of ice cream, you might want to make your own. Plus, you can experiment with the ingredients by mixing two or more berried, melons, or tropical fruits together. Think of some of the strange ice creameries, and how they become so popular.

~Use organic ingredients if possible.~

1. chocolate chips 
2. pieces of pecans
3. toasted walnuts
 
Berry Ice Cream
Makes 3 1/2 cups (455 g)

1 cup (130 g) Greek yogurt or a dairy-free plain yogurt
2 cups (260 g) frozen berries (eg. blueberries, cranberries, raspberries, blackberries, Oregon marionberries aka "Cabernet of blackberries", or elderberries) 
2 Tbs. (30 g) honey
2 tsp. (10 ml) vanilla extract
1/2 cup (120 ml) milk (If using a plant-base, dairy-free, milk, it will add that flavor.)

1. Place all the ingredients in a blender.
2. Pour into a glass container.
3. Freeze for 4 hours.

Tropical Fruit Ice Cream
Makes 3 cups (390 g)

2 cups (260 g) fruit cut into cubes and freeze (eg. pineapple, mango, papaya, coconut, banana, passion fruit, peaches, avocado, or guava)
1/2 cup (120 ml) coconut milk
1 cup (130 g) Greek yogurt or a dairy-free plain yogurt
2 Tbs. (30 g) honey
2 tsp. (10 ml) vanilla extract

1. Place all the ingredients in a blender.
2. Pour into a glass container.
3. Freeze for 4 hours.


Melon Ice Cream
Makes about 5 cups (650 g)

2 1/2 cups (600 g) melon cut into chunks and freeze (eg. watermelon, cantaloupe, honeydew, casaba)
1 cup (130 g) sugar
1 1/2 cups (300 g) coconut cream, heavy cream, or dairy-free milk
1 tsp. (5 ml) lemon juice

1. Whisk the cream/milk and sugar.
2. In a blender, add the melon and lemon juice.
3. Stir in the cream mixture.
4. Place in a glass container.
5. Freeze for  4 hours.


Strawberry Ice Cream
Makes 3 cups (390 g)

2 cups (260 g) chopped strawberries 
1 cup (120 ml) coconut milk
1 Tbs. (15 ml) maple syrup

1. After blending all the ingredients in a blender, freeze 1-2 hours.
2. Let it set for 10 minutes at room temperature before serving.




Kimchi /kimchee/ is a side dish of salted and usually fermented cabbage or radish. Now the seasoning can be mild to, should I say, spicy chili, garlic, ginger, and other "ingredients". Start with a small jar of mild kimchi the first time. If you like it, then try these tacos. Oh, kimchi has a "different" smell.

/gimchi tako/
Severs 4

8 (gluten-free) tortillas
2 tsp. (10 ml) olive oil
8 organic eggs, lightly whisked
2 ripped avocados
2 Tbs. (30 ml) organic lime juice
4 Tbs. (dairy-free) yogurt
1 cup (130 g) chopped kimchi, lightly blotted dry
sliced organic scallions

/il/ 1. Warm the tortillas in a skillet, cover, set aside.


/ee/ 2. Heat the oil and scramble the eggs for about 4 minutes. Then remove from the heat.


/sam/ 3. Blend the avocados, lime juice and yogurt.


/sa/ 4. Fill the tortillas with the scrambled eggs, topping with the kimchi and scallions. 


/oh/ 5. Drizzle the avocado sauce.

Always buy organic berries! Now, let's made a dip for the special gathering of friends and family.
Serves 8
~Use organic as much a possible.~

1/2 cup (65 g) each: strawberries, blueberries, blackberries, raspberries (and from Oregon, marionberries)
2 Tbs. (30 g) sugar
2 Tbs. (30 ml) orange juice
zest of 1 orange
8 ounces (225 g) (dairy-free) soft cream cheese or yogurt
1/2 cup (120 ml) (dairy-free) sour cream
1 tsp. (5 ml) vanilia extract
2 Tbs. (30 g) honey
1 tsp. (5 g) cinnamon
(gluten-free) crackers
garnish: mint

1. Toss the berries in a bowl with orange juice and zest.
2. Use a mixer to blend the creams, vanilla, honey, and cinnamon.
3. Spread on a plater.
4. Topped with the berries.
5. Garnish with the mint.
6. Serve with the crackers.
Oats can be eaten uncooked as in muesli, cooked with water, milk, or orange juice as in porridge, cookies, and oatmeal desserts. Or here, it is used in pan cakes/waffles. 

Bite of history: oatmeal began over 32 000 years ago when Paleolithic peoples ground wild oats into a porridge for food in southern Italy. It reached the Western Bank's of the Joran Valley ca 11 000 years ago. Ancient Romans brought oats to Britain. It is now a stable in Scotland. The first commercial brand appeared in the United States in 1877.

1 cup (130 g) organic (gluten-free) oatmeal
2 organic apples, grated
2 organic eggs
2/3 cups (150 g) (dairy-free) yogurt or orange juice
1 tsp. (5 g) baking powder
1/2 tsp. (2.5 g) cinnamon
1 Tbs (10o g) chia and flax seeds

~waffles~
1 cup (130 g) organic (GF) oatmeal
2 organic apples, grated
1 organic egg
2 cups (260 g) organic orange juice
2 Tbs. olive oil
1 Tbs. (10 g) each: chia and flax seeds

ūnus I. Mix all ingredients.
duo II. Makes pan cakes or 2 waffles

There seems to be  stands on "every" German corner, but you will not see one in Türkiye. It is a Berlin invention from 1971 and is now as popular as a Currywurst stand.

Lamm Döner Kebab (German)
Kuzu döner kebap (Turkish)
Serves 4
Preheat the over to 430ºF/221ºC

1 1/2 pounds grass fed lean veal, cut into cubes
1/2 tsp. (1 g) ground cumin or doner-kabab seasoning*
2 grated organic onions
5 Tbs. (75 ml) olive oil
pressed organic garlic 
3/4 cup (180 ml) (dairy free) yogurt
chopped parsley
(gluten free) flatbread, sliced in half but not all the way

on a serving plate:
1 cub (130 g) each thinly sliced organic: onion, red cabbage, cucumber and diced tomatoe

eins 1. Season the cut veal.


zwei 2. Place on four skewers.


drie 3. Make a paste with grated onions and oil.


vier 4. Brush on the meat. 


fünf 5. Grill and turn the skewers for about 20 minutes, inside temperature 145ºF/63ºC.


sechs 6. Mix the garlic with the yogurt.


sieben 7. Stir in the parsley.


acht 8. Drizzle a little oil into the flatbread.


neun 9. Warm in the open about 7 minutes.


zehn 10. Remove the meat from the skewers, placed on a plate.


elf 11. Make your individual donor kebabs with the meat and the condiments.

*doner-kabab seasoning:

Mix...

1 Tbs. (6 g) each: coriander, onion power, Himalayan salt, paprika, black pepper, oregano, chili powder, garlic powder, and cayenne pepper

1 tsp. (2 g) thyme

1/2 tsp. (1 g) cumin and savory


Use with 

  • vegetables: zucchini, eggplant, bell peppers with olive oil
  • grain bowls: sprinkle over cooked quinoa, couscous, or rice
  • marinades: blend into tofu, tempeh, or seitan for at least 30 minutes; with lamb, beef, or chicken (add little water to form a paste)
  • dip and sauces: mix into (dairy-free) yogurt, cream cheese, sour cream, or Greek yogurt

Butternut squash, aka butternut pumpkin or gramma, is a winter squash cooked or in soups. The name comes from the Algonquian lanuguage askutasquash "eaten raw or uncooked". 
Makes 1 1/2 quarts (1.400 ml)
Preheat the oven to 350ºF (175ºC)
 
1 butternut squash, cut in half, and cut off the bottom bulb, remove the seeds
fresh organic garlic 
olive oil
1 qt (1 L) organic vegetable broth 
3 Tbs. (45 ml) (dairy-free) yogurt  

serve with (gluten-free) bread of choice

1. Rub oil on the squash.
2. Place the cut side on a sheet pan.
3. Rub in garlic.
4. Add a little oil to the pan.
5. Bake about an hour. Insert a knife to check if it done.
6. Cool for about 20 minutes.
7. Scoop out the squash flesh. Place in pot.
8. Squeeze the garlic cloves into the pan.
9. Add the broth and bring to a boil.
10. Purée the mixture.
11. Mix in the yogurt.
12. Serve with (gluten-free) bread.
13. Refrigerate for a week or freeze for 3 months.
 (a) It might need more water or broth to thin it.

 
Well, it is not really an Indian hamburger but adapted from a southern Indian spicy pork sausage introduced by Portuguese settlers in the port city of Goa. 

In 1498, Goa became a major Portuguese settlement and capital of their colonial empire in the East until 1961. (A treaty was signed on December 31, 1974.)

पोर्क हैमबर्गर (Hindi)

Serves 4

vary the amount of spices to taste:
1 pound (455 g) organic ground pork
1/3 cup (45 g) (gluten-free) breadcrumbs
1/4 cup (60 ml) (dairy-free) yogurt
5 tsp. (10 g) each: garam masala and paprika
1 Tbs. (6 g) cumin
dash of cayenne pepper
2 organic egg yolks
2 tsp. (10g) grated garlic
4 (gluten-free) hamburger buns 

एक /ek/ 1. Combine all the ingredients except the pork and buds.


दो /do/ 2. Add in the pork and mix well.


तीन /teen/  3. Make 4 patties and refrigerate for at least 15 minutes.


चार /char/ 4. Heat oil in frying pan over medium heat.


पांच /panch/   5. Brown the meat for about 7 minutes, then lower the heat to medium-low.


: /chay/ 6. Turn the patties over and lower the heat to medium-low. Cook about 6 minutes or until inside temperature of  160ºF (71ºC).


सात /sāth/ 7. Remove, place foil over them and rest for 5 minutes.


आठ /āt/ 8. Serve on the buns with any of your favorite condiments, and some more yogurt.
