Tostadas are corn tortillas that have been baked or fried until crispy and topped with toppings. A taco is one that is stuffed and folder in half. I use the very small corn tortillas for an afternoon snack or appetizers. The various topics make it an interesting experience for guest. 

Bocadillos de Tostada de varios ingredientes (Spanish)
"Multi-ingredient tostada sandwiches"

Suggested toppings:
  • yellow or white organic corn tortillas (Any size you want. Small ones are good for appetizers, larger ones can be cut into triangular shapes or serve as a pizza.)
  • olive oil
  • organic mash avocado(s)
  • sautéed and/or chopped organic onion(s)
  • organic cut lime(s) or lime juice
  • cold or heated can(s) of organic refried beans
  • heat or not organic tomato sauce
  • organic salsa
  • organic chopped chiles and/or jalapeños
  • chocolate sauce
  • (dairy-free) sour cream and/or yogurt
  • shredded cooked organic spicy meat (chicken, pork, beef, and/or turkey) [Carnitas "little bits of meat"]
  • shredded cooked wild fish
  • cooked shrimp
  • fried squid
  • sliced cooked and/or raw organic vegetables of your choice
  • shredded organic cabbage
  • chopped organic spinach
  • sliced sautéed and/or organic mushrooms
  • sliced organic fruits of your choice
  • (dairy-free) cheese(s)
  • sautéed and/or crushed organic garlic
  • hispanic spices: oregano, cayenne, cilantro, cinnamon, coriander, cumin, allspice, parsley, and/or cilantro

uno 1. The tortilla shells are fried in oil until golden brown on each side (45-60 seconds).

 (a) Keep them flat by pressing down with tongs.


dos 2. Transfer to a paper towels to drain the oil.


tres 3. Mix and match any combination of ingredients.


cuatro 4.  Spread various toppings on the tortillas. 

 (a) This can be an individual, fun active.


cinco 5. Sprinkle any spices on top.


Pizza-Mexico? Sure, it is a traditional Oaxacan cuisine, a simple street food. I first saw it from some American friends who have moved there with their two children. The kids liked it, so it must be good!-Mike

Is it a pizza? Well, it is served on a large crispy corn tortilla and sometimes open-faced, resembling a pizza. Like most street foods and those that are found on restaurant menus, ingreidents vary from cook to cook and city to city. 

Tlayudas Oaxaca
/tla-ú:-das  o:-ha-ka/
or 
Tlyaudas Oaxaqueñas (Spanish)

Makes 2
Preheat the oven to 450F (230C)

Tlayudas refers to the large tortillas at the market,
as well as the dish at restaurants.
2 large (dairy-free) corn tortillas or tlayuads
1 cup (100 g) (diary-free) cheese, queasily, Oaxaca cheese, or mozzarella
2 large Mexican chorizo sausages (cook 5-7 minutes) or substitute with any shreded meat or chicken of your choice, cooked
1 can (16 ounce/450 g) organic refried black beans
2 Tbs. (30 ml) avocado or olive oil
1 sliced or chopped organic onion
6 avocado leaves (hora de aguacate)
1 organic garlic clove, minced
2 organic radishes, sliced
1 organic lime
organic red salsa
chepiche herb or cilantro or parsley

optional:
  • strips of chile de aqua or organic bell pepper
  • organic avocado slices
  • shredded organic cabbage
  • organic sliced tomatoes
  • any organic vegetables
  • chile powder
  • cumin
  • black pepper
  • chopped organic lettuce

1. Toast the avocado leaves for a couple of minutes on a grill.
2. Heath the oil over medium-low heat.
3. Fry the onions until they start to brown.
4. Add the garlic and any spices for a few minutes.
5. Cook the beans for 5 minutes.
6. Mash them into a paste or use a blender.
7. Add to the onions.
8. Add the cooked chorizo/meat.
9. Add crumbled avocado leaves.
10. Place a tortilla on a baking sheet or pizza stone.
11. Spread the bean mixture on it.
12. Add some meat.
13. Bake for 5 minutes.
14. Remove and add the lettuce, tomatoes, avocado, cheese, and any of the optional items.
15. Bake another 3-5 minutes.
12. Remove and serve folded in half, open-face, or cut them into slices. 




Shawarma (Arabic: شاورما ; Turkish: donar kebabis a popular Levantine dish of lamb, mutton, or chicken, and today turkey, beef, or veal are found. It is a poplar street food, dating to the 19th century. 
(Arabic:) طاجن شاورما
/tajin shawirma/
Serves 8 
Preheat the oven to 350F (175C)

2 Tbs. (30 ml) olive oil
1 pound (455 g) ground meat of choice
1 organic chopped onion
2-3 minced organic garlic
1 1/2 cups (360 ml) organic chicken or beef broth
1 (14.5 ounce / 415 g) organic diced tomatoes, undrained
4-5 tsp. (8-10 g) Shawarma seasoning*
3 cups (390 g) cooked rice
2 cups (260 g) (gluten-free) pita chips
1/2 cup (120 ml) tahini
1/4 cup (60 ml) (dairy-free) yogurt
organic lemon wedges
1/2 cup (120 ml) herbs (1 or more):
  • cilantro
  • parsley
  • mint
A. Main dish:

1. Heat 2 tsp. olive in a oven pot over medium heat.

2. Add onions and garlic. Cook 5-6 minutes.

3. Add 4 tsp. of Shawarma seasoning and cook for a minute.

4. Add the meat and cook until it is not pink.

5. Add tomatoes and broth. Bring to a boil.

6. Stir in the rice.

7. Crunch pita chips in a bowl.

8. Drizzle with 2 tsp. oil and 1/2 tsp. (1,5 g) Shawarma seasoning and toss.

9. Spread lips over the casserole.

10. Bake uncovered 25-30 minutes.


B. Tahini sauce:

11. Whisk tahini, 1/3 cup (80 ml) water, yogurts and lemon juice.

12. Drizzle the sauce over the casserole and top with the herbs.

13. Serve with lemon wedges.




*Shawarma seasoning:
Makes just over 2 Tbs. (13 g)
Stir together:

1 tsp. (2 g) each: 
  • ground cumin
  • ground coriander
  • ground ginger
  • garlic powder
  • paprika
1/4 tsp. each:
  • ground cardamom
  • ground turmeric
  • ground cinnamon
  • black pepper
  • pinch ground clovers
