In Turkey, a bread stand or shop ekmek mağazası can be found on most streets. We found the bread in many supermarkets and Turkish stores in Germany. It is more difficult to find in the US, so if you have the time and days, try this recipe.

It takes 4 days for this
light and slightly sour flatbread.

1/4 cup (1 ml) water
1 3/4 tsp. (9 ml) active dry yeast
1/4 tsp. (1 ml) organic white sugar
2/3 cup (150 ml) warm water (110F/45C)
2 1/2 cups (625 ml) bread flour
3/4 tsp. (4 ml) sea salt
organic corn meal

A. Making the starter>
Day 1: Birinci gün.
1. Put 1/2 cup (125 ml) flour and 1/4 cup (60 ml) water in a bowl, still well, and cover.
2. Let it sit at room temperature overnight.

Day 2: Birinci gün.
1. Add the same amounts as in Day 1 and set overnight.

Day 3: Üçüncü gün.
1. Add another 1/2 cup (125 ml) flour and 1/4 cup (60 ml) of water. Cover and sit overnight at room temperature.

B. Making the dough>
Day 4: Dörtüncü gün.
1. In a large bowl, dissolve the yeast and sugar in the warm water. Let it stand until creamy.
2. Divide the starter into smaller pieces.
3. Add them to the yeast mixture.
4. Stir in 4 cups (1 liter) of flour and the salt.
5. Stir in the remaining flour, 1/2 cup (125 ml) at a time, beating well after each addition.
6. When the dough has pulled together, pour it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
7. Sprinkle a little flour over the dough and then cover with a dry cloth.
8. Let it raise until double in size.
9. Put the dough back onto a lightly floured work surface and punch out the air.
10. Divide the dough in half and knead each piece for 2-3 minutes.
11. Shape each piece into a tight oval loaf.
12. Sprinkle two sheets pans with organic corn meal.
13. Roll and stretch two loaves into a 15x12 inch (38 x 35,5 cm) ovals.
14. Dust the tops of the loaves with flour.
15. Cover with a dry cloth and let raise in a warm place until they double in size.

16. Preheat the oven to 425℉ (220℃).
17. Bake for 30-40 minutes.
(a) Mist with water 3 times the first 15 minutes.
18. Tap the bottom of the loaves. If it sounds hollow, it is done.
19. Let cool on a wire rack.
