Potatoes-extra coconut milk-flat beans from the open market..., let's put them altogether and spicy it up with Thai penang curry paste*. This red curry paste is hot, so try your favorite curry paste or make your own.

/tai man fà-ràng/
2 cups (500 ml) coconut milk
3 Tbs. (45 ml) penang curry paste or Thai red curry paste (hot and spicy, so start off with a little)
2 lbs/1 kg organic potatoes, cut into 2-inch (5 cm) cubes
handful of flat beans, cut into 2-inch (5 cm) pieces
4 kaffir or lime leaves or 1 Tbs. (15 ml) of lime juice
2 Tbs. (25 ml) mushroom or regular soy sauce
1 Tbs. (15 ml) organic brown sugar
2-oz. (55 g) roasted organic cashews
1. Boil the potatoes in a large pot, about 20 minutes.
2. Drain potatoes.
3. Add the rest of the ingredients to the potatoes in the pot.
4. Serve in a bowl.
*The penang paste goes well with tofu, beans, or vegetable dishes.
