I substituted tofu for beef in this Cuban dish.
Tofu y Patatas
package of organic tofu
1/2 cup (125 ml) olive oil
1 tsp. (5 ml) paprika
1/2 tsp. (2 ml) black pepper 1 bay leaf
1 onion
3 cloves garlic
1 green pepper
1 16-oz (500 ml) can of organic tomato sauce
1 cup (250 ml) each: white wine and water
2 lbs. (900 g) organic potatoes
1 cup (250 ml) capers
Badia Complete seasoning (Cuban spices: salt, pepper, cumin, garlic, other spices and herbs)
1. Cube tofu and brown lightly in hot oil. Add the paprika, black pepper, bay leaf, diced onion, crushed garlic, and bell pepper.
2. When it begins to brown, pour in the tomato sauce, wine, and water.
3. Add diced potatoes and the capers, cook until potatoes are tender. If necessary add little more water or wine.
4. Sprinkle Badia Complete seasoning on top before serving.
