A grapefruit got lost in the refrigerator, and we have too many avocados. Sister Sandy is coming for lunch....Let's make a different salad for her along with the main course!-Mike
Serves 6

1 organic grapefruit*
organic mix lettuce
1 1/2 -2 avocados, cut in half and sliced
2 organic green onions thinly sliced
1/4 cup (60 ml) organic lemon juice and
1/4 cup (60 ml) roasted nuts of your choice
 (quick way: Put the nuts in a microwave-safe bowl, toss with a little oil and microwave 60-seconds at a time, stir after each minute, continue for a total of 5 minutes) or not roasted nuts
1 Tbs. (15 ml) Dijon mustard
2/3 cups (160 ml) olive oil

1. Cut the grapefruit into segments over a small bowl.
2. Keep 2 Tbs. (30 ml) juice for the dressing. Or just squeeze each cut segments.
3. In a large bowl, toss together the lettuce, avocados, grapefruit, and green onions.
4. In a smaller bowl, whisk the lemon juice, extra grapefruit juice, and mustard.
5. Drizzle oil while whisking the dressing.
6. Pour the dressing on the lettuce and toss to coat the leaves.
7. Top with the chopped nuts just before serving.
8. We served this with: "Chicken Yakitori Rice Bowl" for lunch

PS Everyone enjoyed this salad afterwards. Alia thinks the dressing would be good over fish, also.

* Grapefruit is rich in vitamin C, contains fiber pectin, might help to lower cholesterol, and burn fat. Plus the seeds have antioxidant properties.
