Yams provide a nutritional form of energy and protection against obesity, so these cookies are great for after school snacks.  Yams* are starchy tubers found in Africa, Asia, Latin America, and Oceania. They provide about 100 calories per 100 grams, high in Vitamins C and B6, potassium, manganese, dietary fiber, low in saturated fat and sodium. 
Makes 4 dozen
Preheat oven 350℉ (175℃)

2 1/2 cups (525 ml) of all-purpose flour
1 1/2 tsp. (7 ml) baking power
1/2 tsp. (2 ml) baking soda
1/3 tsp. (1 ml) salt salt
1/2 cup (125 ml) organic butter or margarine
1/4 cup (50 ml) granulated organic sugar
1 tsp. (5 ml) nutmeg
1 Tbs. (15 ml.) grated organic lemon peel
1/4 cup (50 ml) honey
1 organic egg
1 cup (250 ml) grated, raw sweet organic potatoes

1. Sift the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
2. Cream the butter or margarine with the sugar in a large mixing bowl.
3. Mix in the lemon peel, nutmeg, honey, and egg.
4. Stir in the grated yams.
5. Blend in the flour mixture into the yam mixture.
6. Place rounded spoonful of cookie dough onto a non-greased cookie sheet. Space the dough about 1/2-inch (1,25 cm) apart.
7. Bake for 7 minutes.
8. Remove the cookies and cool on a rack.

*Sweet potatoes can be substituted for yams.

Eat as is or with 
Lemon Glaze
cover 4 dozen cookies
1. Blend 1 1/2 cup (375 ml) confectioners' sugar with 1 Tbs. (15 ml) organic lemon juice and 2 Tbs. (25 ml) water.
2. Spread the glaze on the cooled cookies.
