We have not eaten a lot of kale before we found this recipe. It is delicious with any meal.
2 Tbs. (25 ml) sugar
1/4 cup (1,25 ml) toasted walnuts, chopped
pinch each of : dried thyme and cayenne pepper
2 Tbs. (25 ml) soy sauce
1 Tbs. (15 ml) lemon juice
2 tsp. (10 ml) honey
1 tsp. (5 ml) sesame oil
1/4 cup (1,25 ml) olive oil
1 bunch of kale, cleaned and chopped or torn
1 medium organic apple, cut into thin slices
1/2 cup (2,5 ml) shredded celery root
A. Caramelizing the walnuts:
1. Heat oil in a skillet over medium-low.
2. Pour in the sugar, swirl the pan to distribute the sugar.
3. Cook, swirling the pan as sugar begins to melt and brown.
4. When it is dark, about 8-10 minutes, remove from the heat.
5. Add walnuts, thyme, and cayenne. Toss quickly to coat.
6. Pour into a lightly greased plate or baking sheet to cool.
7. Once cool, break into small pieces.
B. Making the dressing:
1. In a small pan, combine the soy sauce, lemon juice, honey, and sesame oil.
2. Whisk in the oil.
3. Adjust seasonings to taste.
C. Combining:
1. In a large serving bowl, combine the walnuts, kale, apple, and celery root.
2. Toss with the dressing just before serving.
