
Daikon is a long white Asian radish. It helps the body assimilate and discharge excess fluid, fats, and proteins.

Serves 4
refrigerate 30 minutes
1 medium organic daikon (= 1 lb/450 g)
1 large grated organic carrot
1/2 tsp. (2,5 ml) sugar or more to taste
3 Tbs. (40 ml) olive oil
2 Tbs. (30 ml) organic lemon juice
sprinkle of organic seaweed*
salt (optional)
1. Peel the daikon and grate.
2. Squeeze out some but not all the liquid.
3. Place in a salad bowl.
4. Add the carrot, 1/2 tsp. (2,5 ml) sugar, oil, and lemon juice. Toss.
5. Season with salt (optional) and add more sugar to taste.
6. Cover and refrigerate for about 30 minutes.
