Sure pork is in this Cuban dish, so I used tofu instead.
El Tamal Cazuela (Spanish)
1 pack of organic plain tofu
2 chopped garlic clove
1 organic lemon, juiced
1/4 cup (60 ml) each: dry wine & olive oil
1 organic bell pepper, chopped
1/3 cup (75 ml) tomato sauce
1 cups (250 ml) organic corn meal/flour
1/2 cup (125 ml) water
1/4 tsp. (1 ml) black pepper
1. Cut the tofu into thirds, then into cubes.
2. Marinate it in the garlic and lemon for 20 minutes.
3. Sauté the onions, bell pepper, tomato sauce and dry wine.
4. Mix the corn meal with water. Add to the sauté.
5. Mix in the tofu. Cook about 15 minutes.
6. Season to taste.
7. Serve with rice or potatoes.
