Liven up your Mexican dishes, add to stuff peppers, cover fish, or use as a dip. Many uses for this spicy salsa.
Salsa de Maíz

2 medium chopped onions
2 Tbs. (30 ml) each: dried basil and olive oil
1 organic chopped bell pepper (yellow, orange, or green)
2-3 chopped organic tomatoes (try green tomatoes as well)
2 cups (480 g) organic corn
juice of one organic lemon
1 tsp. (5 ml) cumin
1-2 cloves of chopped garlic 

Three ways to prepare:
I. Sauté: 
 1. all the ingredients until the vegetables are tender
 2. let it cool
 3. serve

II. Purée: 
 1. all the ingredients
 2. serve

III. Mix:
 1. all the ingredients for a chunky salsa
 2. serve
