We had a great cherry tomato harvest this fall. Here is one way to use a lot of those tomatoes and have friends over to enjoy these appetizers.
Tabbouli is a Levantine* vegetarian dish. Traditionally it is part of a mezzo (like Spanish tapas), but now it is served with other dishes or used as stuffing.
Makes 3 dozen cherry tomatoes
و A. Tabbouli:
1. Prepare as directed on the package or our recipe*, omit the tomatoes.

ب B. Preparing the tomatoes:
3 dozen organic cheery tomatoes (or if too time consuming, stuff larger tomatoes for a side dish)

1 quart (1 litter) prepared tabbouli salad
1. Cut the top off (stem side) each cherry tomato.
2. Use the smallest spoon you have to hollow the tomatoes.
(a) Remove the center, pulp, and seeds. (Save and add to: salad, soup, pasta sauce, etc.)
(b) Do not remove the flesh and inner ribs from the walls of the tomatoes.
3. Turn them upside down onto paper towels.
4. Cover with plastic wrap and refrigerate until ready to fill.
