For our anniversary this year, we went to a new Lebanese restaurant. We could have eaten the flatbread and za'atar and skipped the main meal.-Mike and Judy

Dressing
Mix:1/4 cup (60 ml) each: olive oil and organic apple cider vinegar
1 tsp. (5 ml) sea salt
4 tsp. (20 ml) sumak
1. Serve on a salad.
Za'atar زَعْتَر
zaatar, zatar, zatr, zattr, zahatar, azktar, satar
a Middle Eastern herb and
a name of a condiment made from dried herbs
Preheat oven 300F (100C)
4 Tbs. (60 ml) fresh or dried thyme leaves
2 tsp. (10 ml) ground sumak
1 Tbs. (15 ml) toasted sesame seeds
1/2 tsp. (2,5 ml) sea salt
1. Place thyme leaves on a baking sheet and bake until dry, about 10 minutes.
2. Let cool.
3. Grind the thyme leaves finely. Put in a small bowl.
4. Crush the sumak spice finely.
5. Add the salt and crush together.
6. Add the thyme and grind together.
7. Stir in the sesame seeds.
8. Adjust the taste with more sumak.
9. Serve with pita or flatbread.
10. Keep any extra in the refrigerator or freezer.
