Mayan legend tells of a peasant who made tortilla-like bread for his hungry king, more or less 10 000 BCE. Tortilla is a flatbread. In Spanish it means "small torta or small cake". Which is what this dish looks like. Add all the tasty ingredients and invite friends for a Mexican dinner.
Pollo al horno Tortilla (Spanish)
Serves 6
Preheat oven to 425℉ (220℃)
A. 2 cups (480 g) shredded cooked organic or free range barbecued chicken

1 Tbs. (15 ml) olive oil
1 sliced red onion
1 sliced, organic red or yellow bell pepper
1 28-ounce (785 g) can of diced organic tomatoes, drained
1 15-ounce (420 g) can of organic kidney beans, drained
1 11-ounce (280 g) can of organic corn, drained
taco seasoning*
1/3 cup (80 ml) chopped cilantro or parsley
4 flour, organic corn, or gluten free tortillas
3/4 cups (180 ml) grated mozzarella, a Mexican cheese, or dairy-free cheese

•• /caa/ Add tomatoes and its juice, the beans, corn, and seasoning.
••• /xa/ Simmer, uncovered about 10 minutes.
•••• /can/ Add the chicken and cilantro/parsley, cook and stir until it is hot.
/hoo/ Line the base and sides of a baking pan with foil or parchment paper.

-tortilla shell
-1/3 of chicken mixture
-repeat
-finish with a tortilla
-sprinkle with cheese
