Need: special waffle iron and batter to sit overnight. Then you are ready to enjoy a delicious European breakfast. Then too, waffles for lunch or dinner would be nice also!
P.S. A standard waffle iron will do in a pinch.
Belgische Wafels (Dutch)
Gaufres Belges (French)
1/2 cup (120 ml) warm water
1 package (1/4-ounce/7 g) active dry yeast, at room temperature
2 tsp. (10 ml) organic sugar
2 cups (475 ml) lukewarm whole or 2% milk
1/4 pound (85 g) unsalted organic melted butter
2 Tbs. (30 ml) organic honey
1 tsp. (5 ml) vanilla extract
2 cups (475 ml) all-purpose flour
2 organic eggs
1/4 tsp. (1,2 ml) baking soda
toppings: any or all
- organic fruit
- chopped organic walnuts
- warm maple syrup
- plain organic yogurt
- etc.
A. Evening:
1. Combine the water, yeast, and sugar in a large bowl.
2. Set for about 5 minutes.
3. Stir in the milk, butter, honey, and vanilla.
4. Add the flour and whisk until smooth.
5. Cover the bowl and sit overnight in the refrigerator.
B. Next day:
1. Heat the Belgian waffle iron, brush the top and bottom with melted butter.
2. Beat the eggs and baking soda together.
3. Whisk them into the batter.
4. Pour just enough of the batter onto the hot iron and cook 5-6 minutes.
5. Repeat.
6. Serve hot with the toppings in small bowls.
