By making our own hummus, we can vary the ingredients and spiciness.
Makes 1 cup (250 ml)
¼ cup (60 ml) olive oil
½ small onion, chopped
2 garlic, chooped
B. Add and cook 1 minute:
pinch of red pepper
C. Add and cook on medium heat for 5 minutes:
16 oz. (470 ml) can of chickpeas
D. Remove half of the mixture and mash in a separate bowl.
E. Mix in:
½ of juice of an organic lemon
1 Tbs. (15 ml) chopped mint
H. Cool before using.
G. Options: add one or more of the following
chopped olives sun dried tomatoes
crumble cheeses chopped artichoke hearts
spinach peanut butter
organic nuts roasted eggplant
jalapeños or chilies chopped zucchini
experiment with different dairy free cheese
spices and herbs
