¡Olá! Some green chiles in my Quiche, today!
Quiche de México
Serves 6
Preheat oven to 375F (190C)

6 organic eggs
2 Tbs. (30 ml) all-purpose (gluten-free) flour
2 cups (480 ml) (dairy-free) organic cottage cheese
1 cup (240 g) (dairy-free) shredded Monterey Jack cheese or a Mexican cheese
1/4 cup (60 ml) each: melted (dairy-free) butter and diced nitrate-free ham
1 can 4 ounce (115 g) chopped green chiles, drained
organic: salsa* and sour cream or (dairy-free) yogurt

uno 1. Beat the eggs in a bowl.
dos 2. Add the flour.
tres 3. Mix in the cheeses, butter, ham, and chiles.
cuatro 4. Pour into a greased pie plate.
cinco 5. Bake for 30 minutes or until center is set.
seis 6. Serve with salsa and sour cream/yogurt

*salsa roja "red sauce" tomatoes, chili peppers, onion, garlic and cilantro
 salsa verde "green sauce" made with tomatillos
 salsa negra "black sauce" dried chilies, oil, and garlic
 habañero salsa extremely spicy habañero chilies
 salsa meza "corn sauce" sweetcorn, onions, and chiles
