Bring on the BBQ or iron grill on top of the stove! Have a selection of vegetables in individual bowls and let everyone make their own.
Serves 6
Vegetables which work well: zucchini, carrots, kohlrabi, green onions, daikon, mushrooms, cherry tomatoes, asparagus, potatoes or jams, Jerusalem artichokes, beats, radishes, garlic, pearl onions, squashes, pumpkin, bell peppers,...as long as they are firm, cut into bite sizes, and can be skewered.
2 Tbs./30 ml mirin (is gluten free) or rice wine
1/2 cup/125 ml light miso
2 lbs. of mixed vegetables cut into 1-inch/2,54 cm pieces
package of extra firm organic tofu, cut into cubes
olive oil
1. Combine the mirin or rice wine and miso in a small bowl, can add 1-2 Tbs./15-30 ml of water to make a saucy consistency.
2. Skewer a mixture of vegetables and cubed tofu.
3. Brush lightly with oil.
4. Grill until lightly browned but not mushy. Turn the skewer once.
