Mike found a 1967 Pennsylvania Dutch Recipes book in his mother's bookcase. This recipe has cooked chicken, but we used tofu.
Stuff 4 tomatoes

A. Mix together:

1 cup (240 ml) crumble organic tofu (or substitute chopped cooked cold chicken or canned tuna)
1 chopped organic celery stick
1 tsp. (5 ml) minced onion
2 Tbs. (30 ml) chopped organic bell pepper
2 chopped organic hard-boiled eggs
2 tsp. (10 ml) mustard
little mayonnaise, organic yogurt, or almond yogurt-dairy free to moisten the mixture

B. Preparing:

4 large firm, ripe organic tomatoes

1. Remove small slice across the stem end.

2. Refill tomato shells with the mixture.
3. Chill and serve cold.

optionals: pinch of curry or paprika on top of each one


Pennsylvania Dutch were Germans who immigrated to USA in the 18th and 19th century. They settled in present-day Lancaster county of Pennsylvania and still follow traditional culture.
