Laying eggplant slices with cheese and crushed tomatoes plus some basil presents a nice dinner plate.
Serves 6
Preheat oven to 400F (200C)
¾ cups (150 g) all-purpose flour
5 lightly beaten organic egg whites
1 ⅓ cups (265 g) breadcrumbs
2 large organic eggplants
2 large organic eggplants
olive oil
1 can 28-ounces (830 g) crushed organic tomatoes with basil, garlic and onions OR add chopped garlic and onions to the sauce
3 Tbs. (45 ml) balsamic vinegar
6 slices of provolone cheese
grated Parmesan cheese
basil leaves
1. Place flour in a shallow dish.
2. Beaten egg whites in dish #2.
3. Breadcrumbs go in dish #3.
4. Peel 2 large eggplants. Cut each into 9 slices.
5. Dip in the flour, egg whites, and breadcrumbs to coat.
6. Place on a sheet of wax paper.
7. Heat the oil in a skillet over medium-high heat.
8. Cook the eggplant slices for about 1 ½ minutes on each side. Add more oil if needed.
9. In a microwave bowl, add the crushed tomatoes, onions, and garlic sauce with the balsamic vinegar. Microwave 3 minutes.
10. To assemble the stacks:

- Line a larger rimmed baking sheet with foil.
- Place 6 large eggplant slices on the rack.
- Spoon 1 cup (240 ml) tomato mixture over slices.
- Top with 6 more eggplant slices and 1 cup (240 ml) tomato mixture.
- Top with 6 thin slices of provolone cheese.
- Finish with 6 eggplant slices, tomato mixture and grated Parmesan cheese.
- Secure with toothpicks.
- Bake for 20 minutes.
- Sprinkle with some basil leaves on the side.
