Served with couscous for Tyle's 36th birthday, plus a fruit tart (from the store).
(Arabic) سلطة الخضار
(vegetable salad)
Serves 4-6
1/4 cup (60 ml) olive oil
1 Tbs. organic each: lemon juice and cider vinegar
organic mix lettuce
1 red onion, sliced into rings
1 organic cucumber, unpeeled and sliced
1 organic tomato, sliced or handful of cherry tomatoes
feta cheese (or mozzarella daily free cheese)
Kalamata olives
marinated artichokes hearts*
1-2 organic mushroom, sliced
black pepper
chopped chives
dried or fresh oregano
optional: slices of organic bell peppers
1. Mix in a bowl: oil, lemon juice, vinegar and black pepper.
2. Arrange lettuce around the edge of a serving platter.
3. Tear remaining lettuce into small pieces in a bowl and toss in half of the vinegar dressing.
4. Mound the mixture in the middle of the platter.
5. Arrange onion rings around the platter and place a cucumber slice in the middle of each ring.
6. Arrange tomatoes, artichokes, mushrooms, and olives around the platters.
7. Drizzle salad dressing, sprinkle oregano and chives before serving.
8. Serve cheese on the side.
*Can used "Marinated Artichokes and Mushrooms"
