Many vegetable trimmings can be used to make great stock.

trimmings of organic:


  • carrot peels
  • zucchini stems of:  cauliflower
  • onion ends
  • celery root ends
  • herb stems
  • citrus peels
  • potato peels
  • kale stems
  •  stems
  • beet stems
  • broccoli stems
  • etc.
Place the trimmings into a large tiptop bag and freeze until there is enough to make a stock.

1. Add the trimmings to a large pot, cover with water.
2. Simmer for 4-6 hours.
3. Strain if desire.
