No sautéing is need! These are ready for the oven in 30 minutes! Add a salad and maybe a roasted vegetable! Dinner is set for yourself, family, or guest!
Lasagne Rotoli (Italian)
Serves 4-6
Preheat the oven to 400F (200C)
8 whole-grain (gluten-free) lasagna noodles
4 1/2 tsp. (23 ml) olive oil
1 jar (25-ounce/740 ml) organic (gluten-and dairy-free) marinara sauce
14-16 ounces (400-455 g) organic firm tofu, drained
1 cup (200 g) fresh basil
1/2 cup (100 g) chopped parsley
1/2 tsp. (2,5 ml) (gluten-free) tamari or gluten-free liquid aminos
some organic green olives, pitted and chopped
5 chopped garlic cloves
2 Tbs. (30 g) organic wheat germ OR gluten-free: flaxseed, rice bran, ground nuts, or oat bran
2 cups (400 g) (dairy-free) cheese
1. Bring a pot of salt water to a boil over medium-high heat.
2. Add the noodles. Reduce heat to medium-low and cook, stir, until they are almost tender.
3. Drain and rinse under cool water.
4. Transfer to a bowl and drizzle 1 tsp. (5 ml) oil, then toss. Allow the noodles to cool.
5. Stir 3 tsp. (15 ml) of oil into a 1 cup (240 ml) marinara sauce.
6. Spread the mixture on the bottom of a glass or ceramic baking pan.
7. Put the tofu, 1/2 cup (100 g) basil, and the parsley, tamari/liquid aminos, and the remaining oil in a bowl. Mash with a potato masher.
8. Add the olives and garlic. Stir.
9. Lay a noodle on a large cutting board. Spoon about 1/4 cup (50 g) tofu mixture along the length of the noddle, spreading it evenly with the back of a spoon.
10. Gently roll into a spiral shape.
11. Set the roll in the baking pan with the seam-side down.
12. Continue with the rest of the noodles.
13. Save 3/4 cups (150 g) of the sauce.
14. Spoon the remaining sauce over the rolls.
15. Sprinkle 1/4 cup (50 g) of the basil over the top.
16. Cover the pan with foil and bake about 40 minutes.
17. Remove the pan from the oven, leave the heat on, and spoon the rest of the sauce over the rolls.
18. Sprinkle with the wheat germ/gluten-free options, cheese, and 1/4 cup (50 g) basil.
19. Bake another 15 minutes until the sauce begins to bubble and the top is slightly browned.
20. Let it cool on a rack for 15 minutes.
21. Sever the rolls on a plate with some sauce from the bottom of the pan over the top of the rolls.
