Pour over mashed potatoes, vegetables, or meat. It adds great taste to many dishes.
Makes 3 cups (720 ml)

6 Tbs. (90 g) (dairy-free) butter
1 chopped organic sweet onion
2-3 chopped garlic cloves
1/3 cup (65 g) (gluten-free) flour
6 cups (1425 ml) organic chicken stock
3/4 cup (180 ml) dry white wine
2 Tbs. (30 g) each chopped: parsley and chives or 2 tsp. (9 g) of dry each
1 Tbs. (15 g) chopped thyme or 1 tsp. (4,5 g) dry thyme

1. Must the butter in a a skillet over medium-high heat.
2. Add the onions and cook, stir a few times, about 10-12 minutes.
3. Add the garlic and cook a minute.
4. Sprinkle flour over the onions and cook which whisking for a minute.
5. Slowly whisk in the stock and wine.
6. Cook, whisking often, to reduce to desired thickness, about 45-50 minutes.
7. Strain through a fine mesh sieve. Discard solids.
8. Stir in the parsley, chives, and thyme. Add more to taste.
