To add zing to any dish, try this herb sauce.

 Makes 1/2 cup (120 ml)

1/3 cup (80 ml) olive oil
6 minced cornichons (type of French pickle, aka gherkins in the UK), substitute dill pickles
2 Tbs. (30 g) fresh chopped parsley or 2 tsp. (9 g) dry parsley
2 tsp. (9 g) each: chopped shallots, mustard, and marjoram 
1/2 tsp. (2,5 ml) organic lemon zest
2 Tbs. (30 ml) organic lemon juice
pinch or two of black pepper

1. Mix well and serve over any type of food.
