It is one of the primary flavoring ingredients in Cuba. It enhances baked fish, fried plantains, grilled chicken, or anything else you like a bit of Cuban flavor in your foods.
Salsa Mojo Cubana (Spanish)
Makes about 3/4 cup (180 ml)

12 peeled cloves of organic garlic
1 tsp. of sea salt
1/2 tsp. (2,5 g) each: dried oregano and cumin seeds
1/2 cup (120 ml) bottled sour orange juice or 1/3 cup (80 ml) freshly squeezed organic orange juice mixed with 3 Tbs. (45 ml) squeezed organic lime juice
1/4 cup (60 ml) olive oi

1. Crush the garlic, salt, and spices into a paste.
2. Add the garlic cloves one at a time to a food processor.
3. Add the spices, then pulse to combine.
4. Add the juice and mix well.
5. Pour the mixture into as small heatproof bowl or measuring cup.
6. Heat the oil in a small pan over medium heat.
7. Carefully pour the hot oil into the garlic mixture and stir.
8. Let the sauce cool and put into an airtight container. It will keep in the refrigerator for 3-4 days.
