Cook the meat, poultry, or fish. Add Pan Sauce to make your dinner more delicious!

1. In a large, nonstick skillet, sear the organic: meat,  brown the poultry (chicken, turkey), or cook the fish over medium-high heat until cooked to your liking.
2. Remove and keep the bits that stick to the bottom which add flavor.
3. Transfer the meat, etc. to a plate.
4. Pour off all but about a tablespoon (15 ml) of fat.
5. Reduce heart to medium.
6. Add a couple of cloves of chopped organic garlic or 1/4 cup (30 g) chopped shallots.
7. Add a splash of red or white wine or vinegar and stir to help loosen up the browned bits.
8. Add a splash 0f any kind of organic stock and springs of herbs like rosemary or thyme.
9. Reduce the liquid until slightly thickened.
10. Whisk in (dairy-free) organic butter and any seasonings.
11. Discard the herb spring(s). 
12. Spoon the sauce over the meat, poultry, or fish.
