Mexican "mole" (chocolate sauce) is not limited to Mexico. Try a Moroccan variation. It is served with rice or couscous.

Poulet au chocolat (French)
Marinate for 2 hours

1/3 cup (80 ml) organic orange juice
2 Tbs. (30 ml) olive oil
2 Tbs. (30 g) chopped ginger
1 1/2 Tbs. (30 g) cocoa powder
1 tsp. (5 g) paprika
2 tsp. (10 ml) organic lemon zest 
3/4 tsp. (3,5 g) each: cumin and turmeric
1/2 tsp (2,5 g) cinnamon
2 pounds (910 g) organic, boneless chicken thighs
1 sliced organic onion
4 organic carrots, cut into 1-inch (2,5 cm) pieces
1/2 cup (120 ml) organic chicken broth 
1/3 cup (45 g) each: sliced dried apricots, shelled pistachios, chopped parsley

ⵢⴰⵏ /yan/ 1. In a large container, mix together the orange juice, oil, ginger, cocoa powder, paprika, lemon zest, cumin, turmeric, and cinnamon.

ⵙⵉⵏ /sin/ 2. Add chicken and let marinate in the refrigerator for at least 2 hours, flipping the chicken once.

ⴽⵕⴰⴹ /kṛaḍ/ 3. Preheat the oven to 350F (175C).

ⴽⴽⵓⵥ /kkuẓ/ 4. In a baking dish, add onions and carrots.

ⵙⵎⵎⵓⵙ /semmus/ 5. Pour over the chicken broth. Sprinkle with diced apricots.

ⵙⴹⵉⵚ /sḍiṣ/ 6. Top vegetables mixture with the marinated chicken thighs and pistachios.

ⵙⴰ /sa/ 7. Drizzle with marinated juice.

 ⵜⴰⵎ  /tam/ 8. Bake for 45 minutes or until chicken reaches 165F (75C), and not pink color in the middle.

ⵜⵥⴰ /tẓa/ 9. Drain the roasting pan juices into a small saucepan. Bring to a boil and simmer for 3 minutes or until it is slightly thickened.

ⵎⵔⴰⵡ /mraw/ 10. Divide vegetables and chicken among serving plates and drizzle on sauce.

ⵢⴰⵏ ⴷ ⵎⵔⴰⵡ (yan d mraw) 11. Garnish with parsley.

ⵙⵉⵏ ⴷ ⵎⵔⴰⵡ /sin d mraw) 12. Server with rice or couscous.
