चिकन टिक्का मसाला (Hindi)
/chikan tikka masaala/
Serves 4
1 pound (455 g) organic boneless, skinless chicken thighs, cut to bite-sized pieces
1 Tbs. (15 ml) olive oil
1 organic onion, minced
1 Tbs. (15 g) ginger
4 minced organic garlic cloves
1 1/2 Tbs. (20 ml) garam masala*
1 tsp. (5 g) cayenne pepper
2 tsp. (10 g) cumin
1 Tbs. (15 g) each: turmeric and tomato paste
1 cup (130 g) organic tomato purée
2 13.6 ounce cans (480 ml) coconut milk
1 cup (130 g) organic cauliflower florets
1 cup (240 ml) coconut or goat's milk yogurt
juice of 1 organic lemon

एक (ek) 1. In the instant pot, sauté the onions, garlic, ginger, garam masala, cayenne, cumin and turmeric in the oil.
दो (do) 2. Cook, stir, until onions are soft.
तीन (teen) 3. Add tomato paste, cook another minute, stir.
चार (cāra) 4. Add chicken and sauté about 5 minutes.
पांच (pāṃca) 5. Add tomato purée.
छः (chaḥ) 6. Add 3/4 cup (160 ml) of the watery milk from the coconut to the instant pot.
सात (sāta) 7. Cover and cook on High Pressure for 10 minutes.
आठ (āṭha) 8. Release the pressure with a quick release.
नौ (nau) 9. Uncover and stir the coconut cream and cauliflower florets.
दस (dasa) 10. Turn the instant pot to Sauté. Bring to a simmer, cook until thickened, about 15 minutes.
ग्यारह (gyaarah) 11. Serve with the coconut or goat's milk yogurt and lemon juice with (cauliflower) rice.
