Kohlrabi is a vegetable. It is also called German turnip (German: Kohl "cabbage" + Rübe "turnip"), but it is not the same species as turnip. It can be eaten raw or cooked, and both the stem and the leaves.

The first European written record of the vegetable was in 1554. By the end of the 16th century, is was grown in Austria, German, England, Italy, Spain, and parts of the eastern Mediterranean.

Serves 4

1 organic kohlrabi, peeled and grated
2 organic carrots, peeled and grated
1/2 cup (20 g) each chopped: cilantro and parsley
1/4 cup (60 ml) organic lemon juice

1. Mix all the ingredients in a bowl.
