Serves 4
Gruyère is a hard yellow cheese, named after the town of Gruyères, Switzerland, a sweet but slightly salty cheese. Add this to cider vinaigrette and voilà.



3 Tbs. (45 ml) olive oil
1 Tbs. (15 ml) apple cider vinegar
1/4 tsp. (60 ml) salt (optional)
1/4 tsp. (60 ml) ground black pepper
mixed salad greens
2 tart apples, cored and diced, not peeled
1/4 lb. (120 g) gruyère cheese
3 Tbs. (45 ml) toasted organic walnuts pieces
some edible flowers

1. Whisk the oil, vinegar, (salt) and pepper.
2. Add lettuce and apples. Toss to coat.
3. Sprinkle with walnuts.
4. Add slices of gruyère over the top.
5. Topped with some edible flowers
