For dinner we had falafel, tzatziki (but had no cucumbers) so I used Greek or almond yogurt and fresh garden mint instead, with dolmas and this salad.

σχεδόν η ίδια ελληνική σαλάτα (Greek)
/schedón i ídia ellinikí saláta/

                                                         
                   Serves 4
Since I did not have most of the ingredients, I used instead:
original ingredients                      substitution
2 small bunches arugula             spinach leaves
1 small orange                             2 Mandian tangerines
1 cup black olives                        assortment of stuffed green olives
1 medium red onion                    white onion
sherry vinegar                             apple cider vinegar

A. σαλάτα /saláta/ salad
1. Tear the greens into large pieces
2. Place in a serving bowl.
3. Peel one half of the orange/or 1 tangerine and dice it.
4. Toss with the sliced olives and chopped onion.

B.σάλτσα σαλάτας /sáltsa salátas/salad dressing

1/4 cup (60 ml) olive oil
2 Tbs. (30 ml) vinegar
1/2 tsp (2,5 ml) dried oregano or thyme
black pepper to taste

1. Juice the other half of the orange/or 1 tangerine.

2. Whisk it together with the olive oil, vinegar, oregano, and pepper.
3.  Just before serving, add to the salad.
