I bought a 6-pack of tofu. Now to find interesting recipes.
Serves 4
Preheat the grill or
grill pan to medium-high heat
A. Sauce:
2 cups (260 g) chopped parsley
1/4 cup (60 ml) olive oil
3 Tbs. (45 ml) each: organic lemon juice and red wine vinegar
2 Tbs. (30 g) chopped organic red onion
black pepper to taste
pinch or two of red chile flakes
4 organic garlic cloves cut in half
1. Pulse all ingredients in a blender until minced but not puréed.
B. Tofu:
1 16-ounce (455 g) organic extra-firm tofu, drained and liquid removed either by weighing it between towels for 10-15 minutes or in the microwave 2 minutes
2 Tbs. (30 ml) olive oil
1 tsp. (5 g) granulated garlic
1/2 tsp. (2,5 g) each: smoked paprika and ground cumin
(gluten-free) garlic toast for serving
1. Brush the tofu with oil and season with granulated garlic, paprika, and cumin.
2. Grill, gently, flipping once, until deeply golden brown, 6-8 minutes total.
C. Serving:
1. Cut each piece of tofu into two triangles.
2. Place on the toast and spoon on the sauce.
