Here is another paella recipe* For a fast dinner and little ingredients.
Paella Vegetariana Sencillo (Spanish)
Serves 3

2 Tbs. (30 ml) olive oil
1/2 cup (120 ml) each: diced onions, short-grain brown rice, frozen organic peas, and organic bell pepper (strips)
1 tsp. (5 ml) each: chipotle (or paprika) power and minced garlic
1/4 cup (60 ml) white wine
2 cups (480 ml) organic vegetable broth, warmed

1. Preheat saucepan over medium heat.
2. Add oil, onion, and garlic. Sauté about 5 minutes.
3. Stir in the rice, coating with oil.
4. Stir in the chipotle/paprika powder.
5. Add the wine.
6. Reduce heat to medium-low and simmer until the wine is absorbed.
7. Stir in the broth, little at a time. Let the rice absorb before adding the next amount.
8. Simmer, uncovered, about 45 minutes. Stir a few times.
9. Reduce the heat to low. The rice will be sticky.
10. Lay vegetables on top of rice. Cover and steam about 5 minutes.
11. Stir together and serve from the pan.
