The holidays are great time to try new recipes for yourself, family, and friends.
Makes 8 servings

2 cups (480 ml) loosely packed basil leaves
1 large avocado
1/2 cup (120 ml) olive oil
1/3 cup (80 ml) each: organic cashews, walnuts, and grated Parmigiano-Regginao cheese
2 peeled garlic cloves
juice of 2 organic lemons
1/2 tsp. (2,5 ml) black pepper

1. Add to a food processor all the ingredients.
2. Blend together on low for about 30 seconds.
3. Mixture should be creamy but not smooth, with fleas of basil, nuts, and cheese.
4. Taste and season as desired.
5. Used as a sauce for:
  • grains
  • meats
  • fish
  • vegetables
  • dips (add a few slices of avocado and basil leaves on top)
  • sandwich spread
