Pasta Classica del Limone

This is a really good recipe for pasta. I am not usually a pasta lover, but this has a fresh lemon taste to it, the garlic will fill your senses, and the cheese tangyness is much richers then others;I prefer fresh basil, and fresh cheeses, but they are expensive, so use your budget... and ENJOY~!!!

Serves 4 people

Ingredients
1 box of whole grain penne
zest of one organic lemon
basil ( fresh or dried)
Italian seasonings
Fresh Piccornio cheese ~ grated
Fresh Parmeason cheese~ grated
3 large cloves of garlic
2 large roma tomatoes
Approx 1/2 cup (125 ml) olive oil extra virgin

Directions
In a medium size bowl, combine lemon zest, grate cheese, seasonings, chopped garlic, and olive oil. Put enough olive oil so that the cheese is completely covered. Once all the ingredients are in the bowl, using a fork, smoosh them all together into a mix.drain pasta, and put back into the pot. Add "sauce" over pasta in pot and mix. Transfer to a dish.... and serve!...

...bruschetta: pesto spread on slices of French bread, halved a cherry tomato and two olives, baked in the oven 375F (190C) 3-5 minutes
...mixed salad: mixed lettuces, tomato, half of a sweet banana pepper and endive, slices of cucumber and shredded carrot, with a dressing: olive oil/water/wine vinegar with Italian herbs, parsley, and dried basil
...stemmed asparagus
...glass of red wine (optional)
