1-2 Tbs. (15-30 ml) olive oil
1/2 cup (120 ml) each finely chopped: yellow onion, chopped zucchini, and carrot
1 (8-ounce) (225 g) package baked tofu, oriental or teriyaki style, cut into 1/2-inch (1,25 cm) cubes
1 Tbs. (15 ml) finely chopped mint
1/2 cup (120 ml) chopped green onions
1 (8-ounce) (225 g) can sliced water chestnuts, drained
1/4 cup (60 ml) hoisin sauce, plus more for dipping
1 head leafy organic lettuce
organic lime wedges
Method
1. Heat oil in a large skillet over medium high heat.
2. Add onions, zucchini and carrots and cook until softened, about 5 minutes.
3. Stir in tofu, mint, green onions and water chestnuts.
4. Add hoisin sauce and let simmer 5 to 7 minutes, stirring often.
5. Remove from heat and serve tofu mixture with lettuce leaves for wrapping, lime wedges for squeezing and additional sauce for dipping, if you like.
