This is an amazing recipe that I sort of put togther on a whim. The peanut satay was suppose to be for chicken skewers in the original reciepe ( but of course that is not vegetarian) so I substituted wild salmon.. and AMAZING FLAVOR!!!-Alia
Peanut Sauce
1 cup (240 g) organic Peanut Butter
1/4 cup (60 ml) organic fresh lemon juice
1 cup (240 ml) soy sauce (liquid aminos-gluten free)
2/3 cup (160 ml) organic dark brown sugar
1/2 cup (120 ml) organic chicken stock
2 Tbs. (30 ml) honey
Directions:
Put all ingredients into a sauce pan, on low heat. Stir together until peanut sauce become a smooth liquid. Store in the refrigerator to cool for a least 10 minutes. Spread over wild salmon.
Salmon is rich in vitamins A, B, and D, plus high in omega-3s and protein.
