Makes over a cup (+250 ml)

Any type of organic fruit can be used for this basic salsa. Then pour it over your favorite food, example: fish, pasta, a side dish, etc.

1 tsp. (5 ml) lime juice
1 large chopped fruit, example peach or nectarine
1 tsp. (5 ml) sugar
2 finely chopped scallions
1 pint (10 oz./285 g) cherry tomatoes*, halved
1 Tbs. (15 ml) jalapeño, finely chopped (optional or use less if it is too spicy)
1/4 cup or 4 Tbs. (60 ml) chopped fresh basil or 4 tsp. ( 20 ml) of dry basil
2 Tbs. (30 ml) chopped fresh mint or 2 tsp. (10 ml) of dry mint
2 Tbs. (30 ml) red-wine vinegar


Toss chopped fruit with sugar and lime juice. Let it stand for 5 minutes. Stir in tomatoes, scallions, jalapeño, herbs, and vinegar. Serve atop your favorite protein.

*Optional: Mix or match red, yellow, orange cherry tomatoes
