Pilaf dishes are common in Middle Eastern, Central and South Asian, East Asian,
East African, Latin American, and Caribbean cuisines (stable in over 60 rice-based
countries). Alexander the Great first record dishes made from pilaf while in Bactrian (homeland of his wife Roxana) of the Iran World (now located in Afghanistan, Uzbekistan, and Tajikistan). Anything that is over 2350 years old has to be important and good*!
pilav (Turkish)

(Persian) /polow/ پلو

/pulav / पुलाव (Hindi)
Serves 4-6

One of many ways to prepare pilaf. This is Armenia (փլավ plav) or Azerbaijan (plov) *.

4 Tbs. (55 ml) organic butter (almond-dairy free)
1 cup (250 ml) grated organic carrots
1/3 cup (80 ml) each slivered organic: almonds or other nuts and raisins
grated zest of 2 organic oranges
1/4 tsp. (1,25 ml) turmeric
1 1/2 cups (375 ml) pilaf rice
3 cups (40 ml) organic chicken or vegetable broth or water
salt (optional)

1. Met the butter in a sauce pan over medium-low heat.
2. Add the carrots, stir, cook (5 minutes).
3. Stir in the nuts, orange zest, raisins, and turmeric. Stir another 3-4 minutes.
4. Add the rice and stir to coat the grains. Cook about 2 minutes.
5. Add salt (optional), reduce heat to very low, cover, simmer (15-20 minutes).
6. Let stand, covered (10 minutes).
7. Fluff the rice with a fork, transfer to serving platter. Stir before serving.

  • 1 cup (250 ml) organic beans
  • organic bell pepper
  • 1 small hot red pepper
  • 1/3 cup (80 ml) thinly sliced celery
  • 1 cup (250 ml) plain yogurt or almond yogurt-dairy free
  • 3 Tbs. (40 ml) olive oil
  • 1/8 tsp. (0,6 ml) cayenne pepper
  • 1/2 tsp. (2,5 ml) curry power
  • 1/2 cup (125 ml) orzo pasta (not gluten free)
  • 1 tsp. (5 ml) mustard seeds
  • 1/2 tsp. - 1 tsp (2,5 -5 ml) ground cumin
  • 1-3 Tbs. (15-40 ml) minced cilantro or parsley
  • 3/4 cups (150 ml) chopped dill
  • 1 tsp. (5 ml) minced ginger
  • 1/2 tsp. (2,5 ml) ground coriander
  • 1 Tbs. (15 ml) soy sauce (liquid amino acid -gluten free)
*1 cup (250 ml) = 5.4 grams of protein, 0.5 grams of fat, and 40 grams carbohydrate + minerals and folic acid
