The traditional Dutch waffles filled with honey are a long time favorite in our family. They are sold in Germany, where we lived. Some US stores sell them but are expensive. So Mike received a Dutch waffle machine for his birthday.

This batter makes 35-45 single waffles. Filled one with honey and stacked another on top.

1 3/4 cups (500 ml) all-purpose flour
2 tsp. (10 ml) baking powder (without aluminum compounds)
3 organic eggs
3/4 cups (165 ml) sugar
1/2 cup (115 ml) butter
1 Tbs. (15 ml) vanilla or almond extract

1. Mix flour and baking powder in a mixing bowl.
2. Add eggs and sugar and beat on low about a minute.
3. Add butter, beat 15 seconds.
4. Add extract, beat 10-15 minutes.
5. Spray oil on the inside of the machine.
6. Pour 1/2 tsp. (3 ml) batter into each mold and bake a few minutes.
7. Remove each one with two forks. Let cool on a flat surface.
8. Add droplets of honey on one and top with another waffle.
