Patatas con Mojo Verde
(Spanish /mō-hō/)
Batatas com Molho Verde
(Portuguese /mō-lli-ō/)
molho = sauce
serves 3-4

Patatas/Batatas:
1 lbs. (950 g) small organic potatoes
some salt water

1. Put the potatoes in a pot of salt water. Bring to a boil.
2. Reduce to a simmer for 15-20 minutes. Poke with a folk to see if they are done.
3. Drain the water. Leave the potatoes in the pot, return to low heat.

Mojo Verde/Molho Verde
1/2 red or yellow organic bell pepper
3 hot green chile peppers or 1/4 tsp. (1,25 ml) red pepper flakes (adjust to taste)
5 garlic cloves
1 bunch of flat leaf parsley
1/2-1 tsp. (1,25-2,5 ml) ground cumin (to taste)
1/4 cup (60 ml) each: white or red wine vinegar and olive oil

1. Remove seeds and veins from bell pepper and chilis. Chop.
2. Blend all ingredients in a food processor.

Servir/Servir
Pour the sauce over the potatoes. Serve hot or at room temperature.

Substitute:
  • Pour the sauce over vegetables.
  • bunch of cilantro
  • different herb than cumin
  • can of green chiles or jalapeños
