Our Peruvian neighbor's mom made a lettuce salad with just lime juice for dressing. Jamie Oliver added more to the lime dressing. To get the full taste, use a lot of lime juice!
Ensalada de la Col y de la Cal (Spanish)
Serves 4
1/2 of each organic: small white and red cabbage, shred into two piles
about 10 radishes, thinly sliced and chop the leaves for the salad
2 thinly sliced organic carrots
bunch of cilantro or parsley (= 4 tsp./20 ml dry)
1-2 chopped jalapeño chiles or green chili to taste
1 sliced red onion
olive oil
2-3 organic limes
1. Put the white shredded cabbage into a bowl.
2. Add the radishes and leaves, carrots, and most of the cilantro/parsley. Mix well.
3. Add the chilies, red onion, some olive oil. Mix.
4. Squeeze most of the lime juice over the salad. Toss.
5. Adjust for taste with more lime, chiles, and/or cilantro/parsley.
6. Fold in the shredded red cabbage.
Optional:
Add any fresh, raw vegetables in season.
Serve with any Latin dish.
