Interesting use of asparagus and snow peas...
Poulet Orange (French)
Serves 4
1 organic orange, thinly sliced
2 Tbs. (30 ml) olive oil
4 organic or free-range boneless, skinless chicken breasts, cut into serving slices
2 sliced garlic cloves
1/4 cup (60 ml) organic orange juice
1/2 cup (120 ml) organic chicken broth
organic asparagus, cut into bite-size pieces
organic snow peas
1 Tbs. organic lemon juice
2 Tbs. (30 ml) fresh chopped dill (=2 tsp./10 ml dried)
1. In a skillet, sauté the chicken in the oil over medium-high heat. Cook until golden brown on one side, about 4 minutes.
2. Flip, reduce heat. Add the garlic, cook for a minute.
3. Add the orange juice, cook for a minute.
4. Add the chicken broth, bring to a simmer.
5. Add the snow peas, cook for 3 minutes.
6. Fold in the orange slices, lemon juice, and dill.
7. Make a think slice with a knife to check if the chicken is cooked.
8. Serve from the skillet.
