Dates originated around the Persian Gulf, possibly as early as 6000 years ago.
Dry or soft dates are eaten alone or pitted and stuffed with fillings: almonds, walnuts, orange and lemon peel, tahini, marzipan, or cheeses. Used as appetizers, Middle Eastern dishes, Spanish tapas, in beads and muffins, non-alcoholic drink, and jams; as desserts, candy, at holidays.
Dates are free of saturated and trans fat, sodium, and cholesterol with antioxidant capacity.

1/4 cup (60 ml) nutritional yeast or dried breadcrumbs
4 ounces (120 g) soft cheese: blue cheese, goat cheese, brie, camembert, Mexican requesón (not salty, similar to ricotta) or quest fesco (mixture of cow's and goat's milk), Russian творога /tvorog/ (a cottage cheese), yogurt cheese...list of endless choices
1. Preheat over to 375F (190C).
2. Slit dates down one side and remove pits.
3. Place nutritional yeast or breadcrumbs on a small saucer.
4. Stuff each pitted date with 1/2 tsp. (2 ml) cheese and press sides together.
5. Dip slit side of dates in the yeast/breadcrumbs to coat the cheese.
6. Place on a baking sheet, slit side up and bake 10-15 minutes.
7. Let stand 5 minutes before serving.
