Zucchine Arrosto (Italian)
2-3 cups (470-700 ml)

1. Preheat oven to 400F (205C)
2. Cut in half 1 each: zucchini, red bell pepper, and onion.
3. Place on a pan and drizzle 1 Tbs. (30 ml) olive oil over the vegetables.
4. Roast 15 minutes.
5. Let them cool.
6. Add to a food processor + 1 garlic, tablespoon (30 ml) organic lemon juice, 1 tsp. oregano, and optional 1 hot pepper.
7. Process into a paste.

  • Dip for vegetables, chips*, or crackers*
  • Spread on toasted cubes of bread* as an appetizer.
  • Add more oil and serve over vegetables.
*Use gluten & dairy free if needed.
