Since cashews are used in the rice dish, any nut can be substituted.
Makes 2 cups (480 ml)

A. 1 cup (240 ml) uncooked rice: sushi rice or your favorite
 (a) Rinse under cold water, stirring until water is clear (about 30 seconds).

B. Combine rice with 1 1/4 cups (300 ml) water in a small pan.
 (a) Bring to a boil, cover, reduce heat, and simmer 15 minutes.
 (b) Remove from the heat.
 (c) Let stand 10 minutes.
 (d) Uncover and fluff rice.

C. Stir in 1/3 cup (80 ml) chopped unsalted dry-roasted cashews or any nut(s) you like.

D. Add 
1/4 cup (60 ml) each: thinly sliced green onions and chopped cilantro
2 Tbs.(30 ml) thinly sliced serrano pepper
1 Tbs (15 ml) rice vinegar

E. Serve with a curry dish or stir-fried vegetables.
