Rum is the main ingredient, but when you do not have any rum or do not want an alcoholic drink, just the cool taste of lime...
A favorite Cuban drink
2 limes, cut into wedges, plus more for garnish
1/2 cup (120 ml) fresh mint leaves, plus sprigs for garnish
2 cups (480 ml) crushed ice, plus more for serving
1 cup (240 ml) Lime-Mint Syrup*, recipe follows
1/2 cup (120 ml) fresh lime juice
Club soda
1. Muddle the mint leaves and lime wedges with crushed ice in the bottom of a large pitcher.
2. Add Lime-Mint Syrup, lime juice, and more ice.
3. Top off with club soda to taste.
4. Pour into glasses over ice.
5. Garnish each glass with a lime wedge and mint sprigs.
*Lime-Mint Syrup:
2 cups (480 ml) each: water & sugar,
2 limes, zested
1/2 cup (120 ml) fresh mint leaves
1. Bring the sugar and water to a boil in a medium saucepan and cook until the sugar is completely dissolved, about 1 minute.
2. Remove from the heat, stir in the lime zest and mint, and let sit at room temperature for 30 minutes to infuse the syrup with the flavor of lime and mint.
3. Strain out the mint and zest and refrigerate the syrup, covered, until cold.
